Possibly the best meal I’ve ever eaten. The chef came out and visited near the end of our meal and talked about his creations. The miso mushrooms and the cauliflower steak were delicious and my husband had the wagyu beef burger. Our only regret was not being able to finish it all!

This was our first visit to Vail and our first dinner at Flame. Not much for vegetarian options so our server (who was amazing btw) checked with the chef and told me that he’s got me covered. Out came our dinner and oh my gosh, I was so impressed! He totally had me covered! And my husband enjoyed his steak lol The dessert suggestion though by our server….sticky toffee pudding … was by far the best! The best part…the chef came out and greeted us ☺️ and we were able to give him our huge thanks! Not many steak houses accommodate to vegetarians so thank you for making our dinner experience the best experience in Vail. And to top it off, we were celebrating our anniversary which made this even more special.

Had I brought an ice pack to soothe my jaw from all the chewing I had to do this place would have been much better. I’m fortunate to have the opportunity to dine at high end steakhouses somewhat regularly and flame missed the mark… by a long shot. The 95 dollar ribeye was hands down the absolute worst ribeye I have ever had. I literally had to hold it down while stabbing my knife into it to try and carve off a piece of completely raw (they never even asked how I’d like my steak prepared to which I would have said medium rare) and completely unseasoned beef. You can find a more tender piece of beef at Applebees or on clearance at Walmart. And to charge 95 dollars? Despite the price I don’t think I’ve ever had a more disappointing steak in my life. It certainly wasn’t dry aged. It definitely wasn’t prime. And whatever “Colorado” cow it came from was fed a diet of sticks and rocks.

Good restaurant nicely appointed with a decent selection of various cuts. We started off at some virgin ginger drinks and they quite honestly were not the best. However the Australian lamb chops and 8 ounce fillets were not as tender and juicy, but were reasonable OK. We also ordered a side of lobster mac & cheese, brussels sprouts, mashed potatoes, salad and of course the only good item was the chocolate soufflé.

Wow, very few restaurants these days make me say wow. I’ll start by saying this was for our anniversary and we noted that in the reservation. From the moment we sat at our table we were given service rarely seen anymore even at high level dining. The manager sat us, congratulated us, then comes the complementary champagne, without asking complementary bread and wagyu candle show up. Which by the way was one of the most notable things I have tasted in a while, incredible. Our server introduced herself (Chantal I think) she was really excellent! We decided on Cesar salad, the special that night was wagyu ribeye, with sides of Mac and cheese and baked potato. I think that a lot of steak houses are under seasoning their meat lately and relying on sauces to fill the gap. This was not the case at Flame. The steak was seasoned beautifully and let the meat shine, no sauce needed but we did have some chimichurri that elevated the steak, very nice! Everything we ate was excellent, and my SO will attest that I’m a hard critic when it comes to food. Thank you Flame we will certainly be back.
