The vision of Chef Owen McGlynn, alongside wife and partner Mindi McGlynn, Asheville Proper prepares locally-sourced food over a custom hardwood-fueled grill where wood crackles and sparks fly through smoke. We felt so special at Proper! It was my husband’s birthday and I asked on my OpenTable reservation if they did anything special. When we arrived we found a branded card and inside was a hand drawn “Happy Birthday” and signatures. My husband felt so special and I’m so grateful for that attention to detail. We enjoy the food, our server Tess 444 was the exact vibe we needed. I tried the beets and if you love the hell out of beets, this might be for you! Thank you for the excellent experience. We will think fondly of Proper.

took my partner here for dinner and was blown away! they had a tomahawk on special when we went, and it was perfectly done. it was awesome seeing the wood fire grill, and we got to watch our tomahawk being prepped and grilled. the bone marrow appetizer was our absolute favorite dish— we were almost literally licking the bone and thought about ordering more. the potatoes, asparagus, and buns were wonderful too. the wagyu tartare was pretty darn good, but i’m not sure id order it again. great old fashion cocktail to boot.

Tasting menu was amazing!! Lamb, duck, ribeye, octopus (my favorite)…all eight courses were spot on! We came from Winston Salem, working at the two most high end restaurants, and couldn’t have been more satisfied! Thanks Nate! Keep up the great work, you are “Proper”!

It was an EXCELLENT dining experience! The restaurant is beautiful, clean, comfortable, and quiet; even with a sizable dinner crowd. They clearly put a lot of effort, flavor, and expertise into each dish. The tenderloin was easily one of the best steaks I’ve had. Our waitress was well-informed, and had thorough answers to our questions about the dishes. The open fire grill they cook over was a unique touch that made the space feel extra special, and dessert was divine!

Asheville Proper was delicious!! We had the bone marrow, charred octopus, NY Strips, Brussels, and fingerling potatoes. Everything was perfect! Emma was our waitress, she was very helpful. We were downtown and had heard great things about Asheville Proper. It did not disappoint! We were encouraged to have a reservation ahead of time but gut lucky and we’re able to get seated. Once we were seated the wait staff first and foremost were all fantastic. Our server Eric was attentive friendly and had great suggestions. The atmosphere was well decorated and cozy. All the menu options really were just great but our group favorites for were dinner portions were the Waygu Flat Iron steak which was just exceptional and for a small plate the starter charred octopus was delicious. Dessert was phenomenal and we really enjoyed Golden Milk Panna Cotta but devoured the elevated S’mores with frozen chocolate mouse. You won’t regret eating here it’s the perfect spot for smaller groups looking for tasty options with drinks and deserts all worth getting into. Cheers!!

One of the best fire grilled steaks my husband and I ever had! We shared the dry aged ribeye, which seemed smaller than advertised size ( perhaps size before preparation?) But no worries, it still was great to share. We had the potato side which were tender on the outside and soft on the inside with a green goodness sauce, so tasty.
