Two touring metal bands show up unannounced and pour in to this tastefully appointed cantina wanting to drink margaritas. Nya and the Hatch staff treated us like family, showering us with delicious snacks and drinks and some of the best hot sauces around. You won’t be disappointed and we’ll be back!

Hatch Cantina proudly serves southwestern food and brings such unique flavors to each of their dishes. This restaurant is named after the New Mexican hatch chile which can be found in many of their dishes. I tried the hatch chili soup which was packed with flavor and heat. A hearty portion with great attention to texture as well. My favorite of the night was the popcorn chicken tacos with jicama slaw. I seriously cannot stop thinking about how good they were! Beyond the food, the ambiance of this restaurant is spectacular. The interior was carefully crafted and the decorations are attentively placed. Above all, the owner, Jason, is very attentive and caring to his guests. He definitely has great energy and love for this place which is so evidently seen. This place seriously blew me away and I can’t wait to come back!

Lovely spot next to our hotel! Stopped in for drinks and a little nosh after a long day of walking. Highly recommend the blood orange margaritas, and the guacamole with pickled onions/super fresh salsa! Service was great! Perfect location. And what a treat to run into my student from high school days. Jason, great to see you.

Thank you for all the likes! — We attempted to eat here for my birthday dinner. We sat, and the owner approached us and asked us to leave because I was carrying, I guess, because we were sitting in a 21+ area, which is fine because I can’t carry in a 21+ anyways. We asked if there was seating in a non 21+ plus area, and he said yes but that he still doesn’t want it “too dangerous.” If you like to protect your second amendment rights, stay away. The law states that you can carry into a restaurant as long as you are not sitting in a 21+ up area even if the establishment sells liquor. We asked to be seated there and were rejected.—– in response to the owners reply, he knows just because the restaurant sell liquor, doesn’t mean a person can not open carry. They just need to be sat outside of the 21+ area. With all the violence that happens in and around Seattle, we the citizens should be allowed to protect ourselves while being able to enjoy daily activities freely. This establishment is suppressing that from us.

The folks who work here are very nice and the food was great! We got the stacked enchilada “Christmas” style (red and green salsa). The cornbread which was SO GOOD. Service was 10/10 and the drinks were delicious.

As a Texas native, it’s been challenging for me to find authentic Mexican and Southwest cuisine when I’m in Seattle. Hatch Cantina’s approach to Southwest cuisine has solved that problem for me — Christmas-style chili sauce and all — and I’ll definitely be back.

Saw all the great reviews so we had to try this place for ourselves and wow! The chips and multiple salsas/sauces, the delicious entrees and the excellent cocktails… everything was SO on point. Our group had the fried crab tacos, the “Stacked Enchiladas”, the Chile Relleno and I had the fresh, whole trout dinner. Everything was so fresh and tasty, we could not have been any happier. Combined with the super attentive service and light, airy atmosphere and you have all the ingredients for an amazing evening!
