Cafe Aion is a Spanish & Moroccan inspired restaurant on The Hill, near CU in Boulder, CO. We connect with these cuisines for 2 main reasons.
1. The Style of Eating – We love being able to sample a variety of flavorful bites and sips with our friends in an informal manner. Also, gathering around large shared platters (paella!) is a wonderful way to share a meal. Both Spain and Morocco celebrate this style of dining.
2. Though we have no coast, there are many environmental and agricultural similarities between Colorado and these countries. We find local farmers and ranchers growing, peppers, onions, eggplant, lamb and many other wonderful ingredients that one would find in Spain and Morocco. Champagne Moutard Brut
The families of Champagne Moutard Diligent have been living in the village of Buxeuil since the mid 17th century, and have a long tradition of both grape growing and wine production. Located in the Cote des Bar, the vineyard soils are made up of clays and limestones, lending to rich, fruity aromas and good minerality. Champagnes are cellar-aged for at least three years for non-vintage wines and up to ten and fifteen years for vintage wines.

Domaine Begude 2019 Sauvignon Blanc, Pays D’Oc, FR
Domaine Begude was purchased in 2003 by British couple James and Catherine Kinglake. The Kinglakes have converted the vineyard over to organic farming, using only natural fertilizers and no irrigation. Today their wines are among our best direct imports with an array including Chardonnay, Viognier, Pinot Noir and even Grüner Veltliner. The wines are made by Laurent Girault, a native of Charente who has made wine all over France well as New Zealand’s Central Otago region. Laurent’s winemaking style is clean, honest and made with little intervention. The Sauvignon Blanc is vinified in stainless steel to preserve a fresh, bright profile. Snappy and vibrant, this little wine shows notes of gooseberry, lemongrassand citrus zest on the palate, and is a great match to vegetable dishes. One of our favorite pairings for the wine is a fresh herbed goat cheese salad.

Sparkling Spanish Cava – Casteller
Meant to evoke all things Catalan, Casteller Cava is a bright, zesty expression of the traditional sparkling wine of Penedès. “Casteller,” or “Tower,” refers to the tradition of different clans and villages competing during holiday festivals to see who can build the tallest human tower. References to their presence in popular celebrations, especially in the area of Camp de Tarragona, first started to appear during the eighteenth century.  In 2006, the Casteller tradition was named by UNESCO as an Intangible Heritage of Humanity, owing to its widespread practice in Catalonia over the course of many centuries. This lovely bubbly honors the tradition and conviviality of these festivals and the long tradition of sparkling winemaking in Catalonia. Dry, with beautiful texture lent by 12 months on the lees, Casteller is a perfect aperitif for celebrations of all sorts – though we ask that you refrain from building human towers if you’ve been drinking! Even though I moved out of Boulder a couple years I still come back to this place because it’s so good! The drinks are fantastic, and the fried cauliflower is awesome. Plus the service is always great, and I love its location- how it’s almost tucked away on the hill. I highly recommend this place.

This restaurant is an absolute oasis of elevated cuisine for this area of town and so greatly appreciated. The menu is extensive (which makes it especially great to bring friends as you know there will be something for them), diverse, and executed at a high level. Lovely place. Unique and changing cocktails, awesome paella and apps. Some of their best dishes have long preps (45min for paella or half chicken) so put that order in before drinks and then enjoy some apps/tapas which come quickly. Well worth the wait. Atmosphere is both lively and cozy lots of little nooks… Depends on how busy it is. Sunday night was quiet.

Ran across this little gem looking for something different… everything was amazing! Definitely gotta try the fried cauliflower with the saffron yogurt! The house paella and seafood paella were PERFECT! Paired with the cava rosé and a beautiful friendly server the whole experience was awesome!

Dishonest business! My friend and I went for dinner on a Tuesday. Our waitress told us it was happy hour all night on Tuesdays.We asked for 2 orders of mussels and fries ($10 each) and 1 beet salad, all on the Happy Hour Menu. In addition, we each had one drink, and were told these were $3 off for Happy Hour. When I got the check, I made the mistake of trying to be gracious. I barely looked at it and put down my credit card. When I realized I had been charged $95 for the meal, I told the waitress there had been a mistake. She told me our orders were the larger orders from the regular menu. She did not offer to revise the charges, despite my telling her we had ordered off the happy hour menu. She is also the manager, and despite my leaving phone messages twice, no one has called me back. I will not give my business to such a dishonest restaurant again..

They offer a varied menu ranging from tapas to burgers / sandwiches and all the way to a 2-3 person serving size of paella. An additional bonus is that this restaurant offers a handful of vegetarian dishes, if that is something that you are looking for.

The atmosphere was pleasant. Food and drinks were good. On complaint, though, the hostess asked me and my date if we were ready for the check twice! It felt a bit intrusive, and I felt like I was being rushed out of a restaurant that wasn’t busy. A simple “the kitchen is closing” would have been preferred.
