Trackside is an awesome venue and the guys in the truck were friendly, but both of my girls became ill after having the chicken tacos. I had a burrito that was average. If there was any bacteria in my burrito I think the one beer I had killed it, as I also didn’t feel great the next day, but not as bad as my poor daughters. There are many options at Trackside, but I recommend eating ahead of time, especially if you have a fear of yellow jackets. We were there there in late August and they swarmed my girls as soon as they got their tacos and they had to eat in the car. If they get the yellow jackets under control, it would make the experience much more fun.

I was really looking forward to trying this place at kulshan trackside… Unfortunately one the saddest burrito I’ve had in town. The cheese was cold (like what you’d expect from taco bell) and there was hardly any meat in it. I didn’t get any meat until half way through the burrito and even so there was probably only 3 measly bites I got with pastor in it..

Tacos here are simply the best tacos in the Pacific Northwest. It honestly can’t get any better. I highly recommend it for lunch. The green sauce is not very spicy but beware of the red sauce. It will make you sweat. It’s even more awesome that the chef is from Chihuahua, Really makes you feel like you’re having an authentic Mexican lunch.

This is the kind of taco trucks I like, fast friendly and affordable. The asada torta was very good with generous amount of meat but the spinach and cheese tamal was super good and liked how it came with a side of sour cream. Wasn’t a fan of the salsa though.

Had the Veggie Burrito with a beer at Stemma Brewing. I liked they they used buzzers to let you know when your food was ready. Staff was friendly and masked, and took precautions to limit contact.

Not nearly the best taco place in town. I ordered the street taco plate with Al pastor and asada. Their tortillas were not super soft and pliable like I’m used to. The asada tastes like the tacos my mom would make using the $1 taco seasoning packet from the grocery store to be honest. The pastor was edible but not amazing. Their beans and rice had little to no flavor. That being said, the staff was friendly, the prices were affordable, and if it were my only option for food I would eat it. I don’t plan to return.

This food truck is one of the few in Bellingham Ill go out of my way to stop at. The food is always delicious, staff is super friendly and Manny has the magic touch! Great compliment to a beer when coming off of galbraith mountain or when simply looking for a quick quality meal!
