The sushi from Banshoo kept me going during my stay in Florida. The chefs were quick, courteous, and make a delicious roll. I was repeatedly happily surprised with high quality, well-balanced rolls. I tried at least 5 different items off their menu, and every single one was better than the last. The Surf and Turf roll was an especial delight which I cannot wait to have again.

Ok, the word restaurant is generous. This is a 6 seat sushi bar in the main hallway near the elevators. There are tables also in the hall you can sit at. There are multiple food bars in the hall and you can order from any of them from the tables. Sushi was good, limited selection of more fancy rolls and nigiri. If Im staying at this hotel I would bump the rating to 4 stars, but i walked here from another place so it’s a 3 for me. If you sit at the bar order from the hostess.

The construction of a sushi roll is as important to a chef as the food itself. For Yoshi Kohazame, the chef at Banshoo, rolls are an art. Fittingly, Banshoo (“sunset” in Japanese) is open for dinner only, and my meal started with Japanese ceviche of lime-marinated tuna, white fish and octopus, and ended with a refreshing kanisu (tuna, snapper, salmon and crab wrapped in a ribbon of cucumber), with many stops in between. It was a fascinating trip. The simple addition of a small piece of avocado enhances the creaminess of raw salmon and highlights the already delicious Banshoo roll, with lobster, crab, scallop, tuna and flying fish roe. Every sushi chef has a recipe for rice, with precise additions of vinegar, sugar and salt. Rice at Banshoo is a masterpiece, each grain firm and separate, yet sticky enough to stay together. Kohazame’s skills have been honed through 20 years in America—at local legend Rangetsu, Disney’s Swan Hotel and his own restaurant in Tampa—so that they are as sharp as the sword-steel knife he uses.
