In 2014, Cori Luckenbach and Heidi Herr took one look at the Flower Lab shop on the corner of California and Admiral in West Seattle and said, “this place could use some waffles”. Not just any waffle joint mind you, a queer and women-owned café that offers organic coffees, craft beers and ciders, and perhaps the most creative all-day breakfast menu in West Seattle, filled with new and unusual ways to serve and enjoy waffles. Well, as the new decade dawned, Heidi decided to transition – from co-owner to customer – and thus begins our new chapter. BEBOP WAFFLE SHOP!

This is a great little breakfast spot. I think they were a little understaffed so there was a wait on our waffles and they were upfront about it. They were quick with our espresso drinks and they were good. They offer 2 gluten-free options and I went with the cornbread. It was very good, not mealy, too wet, or too dry and under great caramel and coconut toppings. My wife also liked her fruity pebbles waffle.

Love this cozy breakfast place. Their maple/brown sugar butter for the waffles is so yummy. Also, I love the breakfast Sammy with their special aioli sauce, and I add arugula for a little bite. The only thing that would make this place better is if I I was in pajamas and they’re serving me in bed. Coffee comes with one free refill, but splurge on their espresso concoctions. They are worth it.

Awesome spot for breakfast. I got the coco waffle that has cocoa pebbles and whip cream and it was delicious. The coffee is also good. They also have some great vegan/gf options. But I can’t justify the 5th star based on the price, it feels really expensive for just waffles. You order at the counter and they bring it out to some small and uncomfortable table space. Overall a great place, but a touch pricey. I would recommend this place for sure but not somewhere I can justify on the regular.

We really wanted to like this place, however, it took almost exactly an hour to receive a semi good waffle, that was way over priced. The house made caramel was good and the lavender lemonade was refreshing, but it shouldn’t take an hour to make a waffle, and throw some toppings on it. The place was semi busy, but not excessive to the point of it taking that long. Also the gal at the front seemed very irritated to be there.
