In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas.
We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. Normally bill’s is a go to any time. However this was probably the worst food we’ve almost ever gotten. I ordered 3 meals. One was completely wrong. The fries on the other 2 were pretty much inedible. They gave the smallest half a container or gravy. The strips were so tough and chewy or gummy. I don’t know if or how soon we’ll be going back after this. Very disappointing.

First timer. Ordered wrangler plate: brisket, Mac, and green beans. And asked for a kids tenders. Decent portions. Mac noodles were not over cooked. Green beans weren’t mushy, had an interesting flavor. Brisket was ok.

Normally a good experience at this restaurant, but today they dropped the ball. Got my order and fries were undercooked, tea was from the sweet tea batch but not at all to standard, the chicken was not the correct pieces ordered and seemed like i got the bottom of the pan as the breading seemed luke warm and stale, and the sample.of gravy i asked for was left out. Seemed like a lot was going on at this point because there were several others waiting for orders but not necessarily the lunch rush.

Thursday the 20 of July ‘23– came back again to give the benefit of the doubt had another buckaroo chop meal, sorry man but the chop was bad this time. Chop meat looked and tasted old like sitting there for a while and fries tasted old too. The only thing that was ok was the DP I had to drink did not trust the tea. So usually I only go to certain location and they’re always good.. I.e. Schertz both culebra locations and nacogdoches..

I went through the drive thru, ordered Poor Boy meal..I forgot to say Lean!! You would think that I would get at least a decent piece of brisket!! Nope!! Nasty, all fat in every bite!! Grossed me out!! I paid over $10.00 for the meal!! For nothing!!
