WOW! This is probably the most flavorful smoked meat I have ever had. Being from Michigan, Texas BBQ has always been hyped up. Every place I have been to though pretty much taste like similar cooked meat. Bills BBQ has a distinct smoked flavor that is unbeatable! I went 15 minutes ago in the rain and had to write a review. Hope your hand gets better soon Bill! I will definitely be back <3

Bills Brisket melts in your mouth. I could smell the smoke from down the road and I knew right away I was in store for some world class pit bbq.

I got the sausage/brisket sandwich combo and loved it. Bill was great to talk to. I’m not easily impressed with BBQ anymore but something about Bill’s brisket still has me thinking about it. I will definitely be back!

Was in the mood for BBQ. Found this place on google maps and the reviews were really good. Drove up and the guy there asked me if I wanted firewood. Its 102 outside. Dont believe so. But will have BBQ. Asked for a sample of brisket and jalapeno sausage. Brisket was very tender and sausage was good. So I ordered a plate of brisket and sausage. And the last 2 jalapeno poppers. Was $ 11.00 not bad. And $ 2.00 for thr poppers. Arrived home was excited to eat my Bbq. The potato salad was probably store bought. The beams came from a can. Now for the kicker. Brisket was not from the sampler because that one piece was more than than what was in my plate. As you can see all the fat left over from just a couple bits of meat. The sausage was burnt. When I placed my order the guy went to the little building next to him and got the meat. I already had my sampler before he went and got the meat.He said he was about to run out of brisket. So I think what happen was he needed to make a sale so he could unload the fatty brisket and burnt sausage. Oh and the jalapenos poppers were halves not whole and $ 1.00 each you can tell my the picture how tiny they are. This place gets 2 stars for the free sampler that was way better than the plate. Not sure whats going on here but I bet the firewood may be a better deal. Definitely not going back and buy a $11.00 plate and get $ 3.00 worth of food. Good luck folks.

Worst $15 I spent on bbq. He put the boudin in the microwave and didn’t bother to warm up my beef sandwich which was slimy and had no taste. Must’ve been a bad day for this guy.

First time visiting Texas and I was looking for a good homemade traditional brisket, came across this hidden gem. The meat was tender, flavorful with right amount of sauce. My husband is not a fan of beans and let me tell you he loved the beans…. perfect serving with amazing flavor and great service. I definitely suggest making a stop here I know I will be coming back.

The meat was pretty good and flavorful. I think the batch of ribs I got was smoked just a little too long because the rib tenderness wasn’t consistent and the sides (beans and potato salad) were just ok. Let just say it easy to see that Bill gives all of his attention to the meat; the brisket was the best part of the plate. I probably would have given him 4 stars if he wasn’t so conservative with the sauce (none on the side and not enough on the meat), the food was a little more than lukewarm and there weren’t one or two bad piece (hard or too fatty) to make it seem like more meat. Overall, I would probably going there again, but I’ll probably stay away from the ribs and just do the brisket and try the sausage.
