Kanro 5 Year Aged Soy Sauce
Kanro Soy Sauce is a premium soy sauce that exhibits a pleasantly robust and mellow flavor, intense umami, and silky texture. These features are derived from its unique double-brewing method and long maturation period. Typical soy sauce is made with soybeans, wheat, water, koji, and salt, and is brewed only once. However, this sauce is brewed without salt, but instead with a special soy sauce which has been aged for two and a half years in cedar barrels. This mix is subsequently brewed as well, and then aged for another two and a half years. This means that it takes five years in total to complete the production of this supreme soy sauce. Umami in a bottle! Shio koji is a glorious byproduct of sake brewing that can be used to marinate meats, season broths and pickling brines, or be added to meatballs or dumpling fillings. It works by breaking down proteins into amino acids which themselves are responsible for savory/umami flavors.

Most shio koji is sold as a paste, but Hanamaruki patented a method of extracting liquid shio koji by gently pressing sake bags and blending the liquid with salt and alcohol to preserve it.

Truffle Infused Shiro Shoyu
Shiro shoyu is a type of soy sauce made with an unusually high wheat content, and exhibits a pale color and distinctive sweetness. This type of soy sauce is rare yet has traditionally been produced in the Mikawa region (currently Hekinan City in Aichi Prefecture) for centuries. Hi-end Japanese restaurants have prized shiro shoyu because of its unique features that complement the flavors of the ingredients and retain their color at the same time. Truffle-Infused Shiro Shoyu was developed by a Mikawa-based Yamashin Brewery in order that traditional Japanese shiro shoyu can match wider varieties of cuisines, not limited to Japanese cuisine. I have been going to Cafe Sushi since Seizi took over as chef about 15 years ago. I moved away and came back to visit and eat here, and it is still my favorite sushi I’ve ever had. Great sushi for the price. Went here because my neighbor raved about this place. The ssamjang was an interesting sauce, but some of my friends that like ssamjang did not like it on sushi. I would go again and pick up is easy. Accommodated an octopus allergy. Not the best sushi in Boston but best sushi for the price in Boston while maintaining quality and standards.

I’ve been coming here since 2008 (15 years!) and it is absolutely the BEST. While I am bummed they no longer offer dine-in and I miss seeing some of the staff, I am so happy that this Cambridge institution is living on. The store is a delight and I love having a Japanese market in walking distance. The bentos that are available to-go are always super fresh, and amazing cuts of fish. For the broader takeaway menu, I love that the classic staples remain, but that there are always new interesting nigiri or rolls to try. Also, I *love* their miso salad dressing. I wish they sold it in the store! 10 out of 10 🙂

You can do 40$, 60$ or whatever price of choice and Chef will create a special compilation for you. Really a masterpiece sushi place! Too bad that they have such a small and noisy place that they can’t accommodate more customers. We had a reservations so we were seated right away. We ordered sashimi, sushi rolls and salmon ikura/abiding. Everything was fresh and tasty. Their service is fast and attentive. We would definitely go there a second time.
