Ahoy and welcome aboard to Calypso Cuisine LLC out of Weslaco, Tx. Get ready to hear an untold sea tale of pirates and buried treasure. Many moons ago Captain Fernando Cruz headed out on his maiden voyage in shark infested waters in search of culinary gold. Captain Cruz set sail as owner operator of Amistad Restaurant here in the RGV and I was his first mate in the kitchen as a young sailor. One day a sea monster came and almost sank our ship, but Captain Cruz stabbed it in the heart and sent it to the depths of the ocean never to be seen again. The battle was so intense that we had to rest so we gazed around and saw a deserted island just a swim away. It was there where Captain Cruz found his treasure.

We got the Mother of Pearl Shrimp Tacos and the Coconut Shrimp. Both were amazing! The tacos come with a broth (birria style) that is amazing and not greasy. The coconut shrimp was crispy and tasty. The lady taking the order was courteous and they were playing great music to have a great lunch outside. Will definitely be going again.
