This place is a beacon of light when it comes to Mexican food! Their birria tacos were the perfect balance of robust flavors. The most interesting part of my visit was the award winning asada tacos. These are not your ordinary asada tacos, these are special. The chef infuses bacon in the beef when marinating. The result is a savory, smokey and one of one taco experience. The pickled red onion added a unique twist and complimented the taco very well. Overall you get a mix of different flavors that pared so well with each other.

The owner was so cool to talk to! He is the original family owners and for him to open back up and do some amazing upgrades to the atmosphere. Made me feel like I am walking into friends house for dinner. New Taco Spot for sure! We ordered his original birrias tacos best flavor in TC!

Update: I tried the quesabirrias. They were so good! Review from 4/2022: Clean and delicious and great customer service. We tried the tacos de adobada, asada, and tripas. They were all excellent- meat was great and the tortillas were perfectly doradas. We went back the next day and my kids got the asada fries, they were okay. They let us try the consume and it was BOMB. We’ll be back to try the que quesabirrias. I’m excited for this restaurant, it sounds like they’re going to expand their offerings to include a bar and WINGS. Yummmm

To say that Don Rubio’s tacos are sublime is no exaggeration. Don Rubio’s won the Pasco Taco Crawl last year (2022), and one taste of dishes like their ‘asada-nator’ taco will convince you why. Try it with the red salsa. Also delicious: al pastor, carnitas, and potato flautas. The green salsa is also a masterpiece. This is the place to convince you not to get tacos outside Pasco.
