Located inside Hyatt Centric City Hotel, Escala Provisions Co. is the only restaurant/bar in the hotel. They offer underwhelming breakfast, lunch and dinner menus with a bar at over inflated prices. The meals we had were okay but nothing special. The decor is beautiful and the service was good, but we’ll skip the restaurant during future trips.

Located in the Hyatt Centric Park City we have had breakfast at Escala Provisions dozens of times and have had apres a couple of times there as well after a long day of skiing with good experiences on every occasion. The restaurant never gets too crowded, and every experience we have had there, the food and service have always been excellent. If you’re staying at the hotel or in the Canyons area, this is a great spot to visit, especially for breakfast. Would love to see a lounge area added someday for a better apres experience.

Staying at the Hyatt Centric in Park City the Escala Provisions Company is our favorite breakfast. Everything is delicious. Today we had an omelette, French toast and the Hyatt breakfast. My son loves the French toast and it is amazing to look at and tastes better. The omelette is completely stuffed with your favorite toppings, and the Hyatt breakfast gives my wife the options she looks for. Another notable dish we have had this trip was the yogurt and granola with fresh fruit, lighter than the other breakfast items and still delicious.

For lunch (before 5pm), we could not have been more pleased. We has the chili – which was a big bowl with western chilis in them (a tad spicy, but not too much) and the short rib grilled cheese with sweet potato fries (you can opt for regular as well). The grilled cheese was so good, that we had it 4 times over the week!

The food here was incredible. Just had lunch here after skiing – the winter squash soup and beet salad with grilled chicken were some of the best I’ve ever had at any ski resort. The quality and service were really extraordinary. I never write reviews but this really deserved it.

Thier floor was dirty. They could not provide me with a menu for lunch until I insisted. They delivered lunch to the table covered in plastic. They gave me a plastic fork for thier $18 sandwich. They would not let me sit down with a back problem until I ordered. The sandwich bread was chewy. Thier menu is not on Google maps. Thier sides are not on thier printed menu. It’s no wonder no locals come here or recommend to visitors. Go to Versante or Boneyard for lunch. They do a very poor job advertising. I commend them trying to stay open off season. Dinner probably better. It’s really sad because they could really accelerate if they advertised free parking, local off season specials, etc.

Do people work here? Waited 10 minutes for a hostess, finally seated 10 minutes after the reservation and waited another 10 till we had anyone come to the table. Food is sitting at the kitchen ready to be served yet 0 servers EVER walking around. People came over from the hotel to help people because it so obviously looked ridiculous.

Wow! Significantly exceeds expectations of a hotel restaurant. If you’re in Canyons, definitely visit. And if you’d like to go to Handle or Twisted Fern but can’t get in, try this. Earlier reviews from pandemic are not representative. It’s still quiet, but staff have been lovely over multiple days, and the chef is stellar. The single best piece of duck I’ve ever had, with crispy skin and beautiful cherries on the side, not drowning it. Alongside a squash risotto I’ve never seen before. Their Bison chili is a category-maker: light, fresh, flavorful. Creative Cocktails. Deserves to be much busier, and hopefully will be soon.
