It is extremely hard to find authentic Indian/Indo-Chinese/Pakistani foods in Fort Collins. FoCo Curry is the best source of these cuisines here. I have been a regular customer for years. The chef even accommodates custom requests for dishes and they are always spot on with the taste and authenticity. Unlike all the other restaurants/caterers in the FoCo area, the chef uses a variety of spice combinations in each cuisine to bring out the best taste. Instead of just adding hot sauces/green chilies to make it “hot”, which is common here in northern Colorado for Asian foods, the chef keeps the heat from chilies on one side while allowing food enthusiasts to enjoy the flavors of individual spices on their palates. The chef has a unique mastery to hit the perfect flavors for meats- which is a must try.
