Gopchang (곱창) can refer to the small intestines of cattle (or pig) or to a gui (grilled dish) made of the small intestines. The letter is also called gopchang-gui (곱창구이; “grilled beef small intestines”).
In Korean cuisine, it is stewed in a hot pot (gopchang-jeongol), grilled over a barbecue (gopchang-gui), boiled in soup with other intestines (naejang-tang), or made into a sausage (sundae).
Gopchang was eaten as a rich source of iron and vitamins, it was served as a health supplement. Today, gopchang is regarded as a delicacy. It is a popular anju (food served and eaten with soju), as it helps break down alcohol.

Gopchang story is my go to place every time I crave intestines. I’ve been here countless times and it’s always a good idea to try to get on the waitlist if you’re not set on time or get a reservation because the wait times can be brutal. My friends and I always order their large intestines but their assorted is good for those that don’t like things that are too fatty. The medium is good for 2 people but we always end up getting another single order of intestine. There isn’t a gamey taste and the intestine and innards are always cooked perfectly! Crisp outside with a fatty and chewy inside. Their gop gam chee or fries with cheese and intestine, steak tartare, seafood pancake, intestine fried rice, and kimchi stew are also really good!

Wonderful gopchang spot with attentive service, ample banchan, and amazing food. The food is very pricey but if you want gopchang, there is no better spot. We got the kimchi soup, gopchang set, and pork belly. Everything was delicious.

I love this place! If you like KBBQ and you are an adventurous foodie, you will enjoy this. Note: they specialize in innards. I usually get the combo and it comes with small and large intestine, beef heart, and tripe. The innards are cleaned and seasoned to perfection. Highly recommend this place!
