It was my first time eating this delicious bowl of ramen noodles. The noodles are hand-made, the soup is made from sweet and fat-free chicken. The pork is especially tender and well-seasoned. This is all served by the lovely, friendly owner.

This hidden gem in Escondido is a must try! I love ramen and had to give this place a try. I usually get pork but wanted to step out of my comfort zone and get chicken instead. What intrigued me was that the broth was 100% chicken! The tonkotsu broth was very light and not heavy at all! I even finished slurping the broth, something that I usually not do!

Amazing food at unbelievable price. If you dont eat pork like me, you never feel completely welcome at a ramen restaurant. So when I learned there’s a “100% chicken” ramen place I just had to try it out, and I was blown away. What an amazing bowl of ramen. And for $12 only???? It was better than the ramen I’ve paid $16-17 for at places like Tajima and Nishiki. Fantastic noodles (hand-made according to the owner). Perfect egg. I’m actually worried they’ll go out of business if they keep selling at such a low price. It’s so good I ate 1 bowl there and ordered 1 more to go.

This was the best Ramen my wife and I have ever had. The service was exceptional and the food even better. The owner/chef was very welcoming and friendly. The homemade broth and noodles were so good I had to finish all of it. We loved it so much we had to take out a to go order for our friend that loves Ramen. Amazing experience. Will definitely return. Best in San Diego area!

Amazing. I’ve tried all the local ramens from Harumama to RakiRaki. The broth was so good that i finished it. Normally I would leave chasu pork or take it home. You can’t get that for $13 these days. Great presentation!

We tried the chicken Ramen and it was a wonderful culinary experience! The broth was smooth and delicious, the chicken was tender and cooked perfectly. I’ve never tasted seasoned eggs like this before it was such a treat. I don’t eat alot of noodles, but these Ramen noodles were so good, I almost finished them all. Generous portions! Thank you!!

Our new favorite ramen!! We got 1 combo and 1 pork and we loved both equally. Tonkotsu is my favorite ramen broth and this is just like it, but chicken based. The broth is so creamy and full of flavor, and the toppings are a perfect balance of flavors. I’ve never had bean sprouts or garlic chips in my ramen before but they were great additions. The eggs and meats were cooked perfectly (and I’m pretty picked about how pork is cooked). I was worried that the portion would be smaller because of the price but it’s not, I was very full and satisfied at the end. Delicious flavor, super fresh, great prices, super friendly owner, and so close to home! Our new go-to for sure.

Hajime Ramen has my highest recommendation! After living in Japan, it is challenging to find authentic tasting and flavorful ramen in the US. The noodles were cooked to the perfect tenderness, egg soft-boiled to the ideal doneness, and the broth had the savory umami taste like pork tonkotsu (except its chicken-based paitan broth). Bowls offered included pork, chicken, or both. The owner was also incredibly friendly, responsive, and very talented! Glad that I found this place so close to home, but I would travel the distance to eat it again. Yum!

Professional, responsive, and incredibly tasty. Broth and meat carried a lot of flavor which was accompanied by crisp, fresh produce. I was curious what this home/restaurant could accomplish, but I was not disappointed. Felt like picking up home-made ramen from a friend or family member, but the whole interaction was very professional. I will certainly visit again.

Hajime’s chicken broth is surprisingly light and smooth. The noodles were good, and the pork topping was superb. Glad we finally got a good ramen place around here. I am definitely coming back soon.
