HIDETO KAWAHARA is the founder of HIDE-CHAN RAMEN in Japan. His father owns DARUMA RAMEN in Hakata-ku, Fukuoka which opened over 50 years ago. In 1993, following in his fathers footsteps, HIDETO opened his own ramen house in Hakata, the original HIDE-CHAN RAMEN.
HIDE-CHAN’S Tonkotsu Ramen is a rich creamy pork bone soup with thin long noodles. He created an original ramen that made him a pioneer in the ramen world while holding on to traditional and authentic ramen to his recipes. In 2002, the first HIDE-CHAN RAMEN outside of Hakata was opened in Akasaka, Tokyo and then 13 more stores throughout Japan.
This Hell’s Kitchen location opens its door on March 25, 2017 and instantly gain popularity among New Yorkers & tourists.

Amazing ramen! I had the spicy garlic and it was delicious! Coconut broth with lots of spicy garlic flavor. Perfect amount of spice for me. I also had a delicious glass of Sauvignon blanc and it was a deal at $9. Also, everyone was very friendly and great service! I will go back again next time I’m in the area!

The ramen was great they offer variety of bowls for ramen I got the lunch special which there is a good varity its $16 i got the classic which was great if you dont know many types and also gyoza it came with 3 extra ramen and pork was 2 dollars each I loved that after I got the matcha pudding which is a little pricy but it was amazing will come again.

Have been loving their spicy garlic ramen for years. I remember when their Midtown East location would have extra garlic oil on the tables for customers to add freely. This Hells Kitchen location is closer to me, so I’ve been coming here instead since it opened. Service has always been friendly and attentive. Place is cute and clean. The white creamy tonkotsu broth becomes black once you give it a good stir. This has always been my top ramen spot in town bc of the garlicky deliciousness and straight noodle option. I have yet to find a garlickier ramen spot but am open to recommendations!

I always try to make it to a ramen shop when I’m visiting a large city because we don’t have any near where I live. In this case, I decided to look at Reddit to get a recommendation for a good place that isn’t too expensive. Hide-chan was one of the top two or three that surfaced in the ensuing discussion and was on my way back to my hotel, so I went with that. And I was not disappointed by that decision.
