Pound serves 2 to 3. Top grade beef perfectly seasoned with a salt and pepper rub. Slow smoked with oak for twelve plus hours resulting in a thick, black crust and melt-in-your-mouth tenderness on a hand-built reverse flow smoker.

Giant Beef Ribs
Pound. A beautiful cut of meat with perfect fat marbling through out the meat. Seasoned with salt and pepper and blasted in the smoker until the perfect crust is achieved. Each rib falls apart with tenderness when finished. These ribs are very hard to find & especially served like this. They weigh between 1 & 2 pounds usually and can feed a group.

This is an outdoor eatery and busy durning lunch. They are still in the process of completely construction on the outdoor seating area. Meat was nicely seasoned with a medium smoke flavor and very tender (sliced brisket and pulled pork in pic). Great service and great BBQ will be returning for more!

This food was amazing, pinto beans were nice and hot and seasoned well, sausage was good and brisket wonderful. Wife had Turkey and mac and cheese, all was wonderful. The guys very friendly and thankful. I would do it again. Small place but that’s where you find the good stuff. Watt.

I wanted to like this place. I really did. First time today. First, no AC. Second, $72 for four smashburgers fries and waters is too expensive. And considering, our patties were not made to order….they were pulled off a tray warmer right in front of us makes the cost seem even more overpriced. My burger patty was small and dry and crumbly. No ketchup. Guys were cool. That’s about all our visit had going for it today. We left super disappointed and still hungry.

Likely the best BBQ in Lubbock. Sauce may be the best I’ve ever had. I used my usually ignored bread to sop up every bit. Rib meat literally fell off the bone. Cheesy papas and street corn sides would be worth the trip alone. Love that you buy the meat by the pound so you can get as much or as little as you like. Great for a sampler like me. I will definitely be back. Can’t wait to try the smashburger. Only took one star off for atmosphere because it was hot in the building so I got ours to go. Parking could be tight so I would recommend getting there early.

Food is top notch! And so is the service. Fast and friendly We had sausage, brisket and ribs plus the street corn and cheesy potatoes. All had great flavor, were tender and well worth the price paid. Only complaint is that it was so hot in there! We had planned to eat there but ended up getting it to go bc of the heat. Parking can be an issue when they are busy.

Hill Barbeque is sooo fire!!!! BBQ smash burger is delicious and full of flavor. It came with chips ON the burger – they’re speaking my language! And the pickles yall!!!! Omg. Perfection. Just the way a pickle should be. I also got the mac & cheese which is super cheesy and well seasoned. Peach cobbler for dessert, tastes like my childhood! The crust is amazing.
