Meats by the Pound
Burnt Ends
The Point End of a Brisket, seasoned with our homemade Texas Beef Rub and Smoked for over 20 hours in a mix of Hickory and Mesquite until it’s super-tender with a Very Dark Bark. Then it’s cut into cubes and tossed in our Kansas City Sauce. The ‘Crown Jewel’ of all Beef, and our most popular meat for over 7 years. Choice of one Free Sauce.
Sliced Brisket
We slice the center of the brisket so you get a bit of the leaner ‘Flat’ and the moister ‘Point’ together for the best of both worlds. Sliced to Order, a true Smokehouse Classic. Our brisket spends over 20 hours in a mix of Hickory and Mesquite. Served Texas-Style with no sauce. Choice of one Free Sauce on the side.
Chopped Brisket
Lean Brisket chopped to pieces and tossed in our Kansas City BBQ Sauce. A favorite in BBQ Joints around the Country. Choice of one Free Sauce.
Pulled Pork
We season Pork Shoulder(Boston Butts) with our Homemade Pork Rub and smoke it for over 20 hours with Hickory until it is falling off the bone tender. Pulled to order and tossed lightly in our Kansas City BBQ Sauce, this is the real deal. Choice of One Free Sauce.
Pulled Chicken
Smoked Boneless Skinless Chicken Thighs, Hand-Pulled to order and tossed lightly in our Kansas City BBQ Sauce. Choice of one Free Sauce
Pork Belly
Pork Belly is the same cut as Bacon, with layers of fat and lean. We season ours with a homemade ‘Pork Belly Rub’, and smoke it low and slow until it’s tender and moist. Comes with a choice of one Free Sauce.
Sausage
Sausage is a BBQ Staple throughout America. We serve a Mild Portuguese Linguica and a Louisiana-Style Cajun Hot Link.
Sides
BBQ Beans With Pork
Made from Dried Pintos, Smoked Brisket and Pork Juices, our Kansas City Sauce, Brown Sugar, and Chopped Pork; these beans are not messing around.
Coleslaw
Deli-Style Creamy Coleslaw, with Mayo-Sour Cream Base and Celery Seed.
Vinegar Slaw
Vinegar Based Dressing, no Mayo, sweetened with Apple Juice and Brown Sugar. Touch of Heat.
Mac & Cheese
We make an Extra Smooth and Creamy Sauce using our secret technique, and mix it with Elbow Macaroni. A truly unique dish that pairs perfectly with our Meats.
Sweet Potato Mash
Unlike Southern-Style Sweet Potatoes that are more like a dessert, these Sweet Potatoes have no added sugar. They are simply roasted and lightly salted. Paleo-Friendly and Gluten-Free.
Deviled Eggs
Southern-Style with Sweet Pickle Relish. Topped with Bacon. 3 per order.
Cornbread
Slightly Sweet, Topped with Honey. Not the Super Sweet Corn Cake from the North, or the Drier Unsweetened version from the South. Our version is right in between!

Being from the south, this place has pretty good meats. Sauces are good. Their sides are decent. The service is always friendly, never too long of a wait. My only complaint is that we have been here 3 or 4 times now and they are always out of one or more of their side items and it’s usually the ones we are trying to get. Have been wanting to try the cornbread but they are always out. Coleslaw needs more “sauce” it is basically just a cold cabbage salad.

Definitely will try it again but some of my food was luke warm and the sliced brisket was too dry. But def if it was warm and fresh 5 stars.

Food was ok…however…We got delivery, and they forgot the sauces, which are the main source of flavor. I called and they said, “Well the sauces were free anyways, sooo…” So, tough luck? Enjoy your bland food? “Next time you come in you can have all the sauce you want.” We don’t live here. Cool. If I owned this business I’d be ashamed of this service. I don’t think they are a one-star restaurant, but since I was basically told to F off, this is my only recourse by bringing down their average. In the spirit of your employee, “The reviews are free, soooo…”

Loved it! Great staff. Porkbelly and brisket were exceptional. Tried all the sauces, liked the spicy and the mustard based ones best.

Some people believe our humanity was born from the nutrition derived from “cooked” food over an open, wood fire as the nutrients became more bio-available and our brains grew. Humboldt Smokehouse (HS) has seemingly perfected those first attempts tens of thousands of years ago of using smoke and heat to enhance taste and nutrition. This is NOT your typical smokehouse/BBQ food which often consists of lower quality meat cuts over-smoked and dried-out so that the any flavor is overwhelmed by the acrid smoke taste. The meat is tender and juicy with the perfect amount of smoke flavor. Even the burnt ends are juicy with just the right amount of char.

This was smokin good!!! See what I did there. Found this little gem as we were Nomading our way back from Mazatlãn MX and pulled over with our trailer and truck for a bite to eat. So flavourful. I had the charred ends meal. Nom nom. We didn’t have any leftovers. That’s indicative of how nummers our meals were. Take out or dine in.

My family and I are traveling and came for late lunch and unfortunately this was very just OK bbq. I wouldn’t recommend or return, especially at the cost of $100. Ordered a variety of items- brisket, burnt ends, pulled chicken, a sandwich, cornbread, and various sides. Nothing was really good. Burnt ends were ok…most of the brisket was dry and my sons was way overdone, and had a dark dry crust on more than half of one slice and shouldn’t have been served, the chicken had okay flavor but was also just dry and overcooked. The Mac and cheese was dry and tasted like it was reheated Kraft Mac and cheese – if it was one item I’d have shrugged and gone about my day, but this was the whole meal that just wasn’t worth it.
