After a ten year hiatus while living out of the area, we returned to find that Jax is as incredible as we remembered. Every dish from the apps to the entrees were perfection! The calamari was lightly breaded and very tender. The oysters were fresh, perfectly shucked, and the mignonette was as good as it gets. The gumbo is better than most I’ve had in Louisiana, and I travel there a lot for work, nice dark deep roux and rich flavor! The yellowfin tuna was beyond words, my wife never orders tuna anywhere, sushi or otherwise, but this dish was on another level. The halibut dish was equally as good, I love halibut having lived in Alaska and catching my own, Jax is way better than my own fresh caught, the beluga lentils very tasty. Overall, perfect, I hate to keep using that word, but it was perfection. And Kayla’s service was above and beyond while being very friendly and personable!

JAX IS AMAZING. I love the creativity of their dishes, the freshness of their fish, and knowledge of the staff. I feel better eating here with the knowledge that they are sustainably motivated and certified by the Monterey Bay Aquarium Seafood Watch. They rotate their menu to reduce contributing to overfishing, and work with suppliers to decrease their impact on marine ecosystems.

Some of the best oysters I’ve had in the area, with a selection of at least half a dozen varieties, of both east and west coast. The Spanish charred octopus was sublime as well, and a wonderful mixologist is on staff!

Great service! Allie was so amazing and helpful. She had great recommendations and even gave us recommendations for breakfast the next day. The Maple Old Fashion is a MUST! We had the West Coast Oysters and they were soooo good. Our 3 kids had a blast coloring on the table (there’s plain white paper on the tables). Will definitely come back here if we are ever in Fort Collins again.

Unfortunately I have to warn people, this place is a mess. Employees are trying hard, but you can tell that ownership doesn’t care. Food quality is below par… don’t order the wedge salad unless you’re a baby. Hope this review helps kick it into gear.

BEST HAPPY HOUR! If you’re looking for a fancier fun time, that’s more within budget. Jax’s happy hour is our favorite date night spot (date night includes our 4 year old and he feels so special getting their Mac and cheese).
