The unique umami is from our secret soy sauce , vinegar and chili oil. And three sauces are directly imported from japan. And soupless ramen actually only has ⅓ of the calories of soup ramen. Kajiken is by far the best ramen restaurant in Baltimore! I’ve tried everything on their menu and you can’t go wrong. The brothless ramen is more flavorful than the standard broth ramen and the uniqueness of the brothless ramen is another reason why I like this place!

Great food! We started off with the pork gyoza which was delicious and flavorful but a bit too oily. The aged tofu which was deep fried with shreds of radish was so soft and delicious. We got the chashu don donboru which was so good, the chashu was so flavorful 10/10. I love the idea of a ramen place that serves ramen without the broth and the one I got did not disappoint. The homura aburasoba which was sooo delicious and flavorful, literally a 10/10. My friend got the keema curry which was also delicious and had a really strong curry flavor. We also got the salted plum sprite which had a very interesting burst of flavors but was delicious. For dessert, we got the taiyaki ice cream which was also a 10/10 super yummy. Service was relatively quick, there is a wait because the place is relatively popular so try to come at a nonbusy time.

KAJIKEN is mighty yummy! We got the Keenan Curry and the Sukiyaki brothless ramens and they were both a delight – would highly recommend both of these options! We also got Karaage to start and the Matcha crepe cake for dessert!

I heard about this place from my friend, and took an opportunity to visit. I was a little skeptical of “brothless ramen,” but the actual product was delicious. Additionally, all of the appetizers and sides we ordered were cooked to perfection, and very tasty. The hype is real.

A newly opened Ramen restaurant. Gyoza crispy on one side with good filling. The tonkotsu broth lacks depth of flavor, noodle, bok choy and the egg are nicely done. A bit expensive for college students.
