We have 2 different types of Piadina (flatbread) – an authentic dough following the first written recipe from 1371 AD as well as vegan dough option made with extra virgin olive oil. Both are handcrafted right here in Fort Collins at the La Piadina commissary kitchen using organic flour. We make our own stracchino cheese spread, mushroom bechamel, marinara sauce, and pesto.

I don’t often take time to write reviews but we tried the food truck out tonight for the first time and we were impressed. We tried three different sandwiches and they were all good! My six year old even loved hers. Everything was fresh and delicious! Another thing I really liked was that the guy who prepared our food washed his hands before he started preparing the food. That’s always nice to see! We want to try more of these sandwiches soon!

The food truck is 10x better than the actual shop. I just find it more than a bit frustrating that instead of calling out that my food is ready, the cook spends his time sitting on his phone. Having worked in multiple kitchens, it’s pretty unprofessional to just hang out on your phone when someone is trying to order food. Food was decent, better from the truck, attitude here is terrible though. I wouldn’t recommend it to a friend.

My husband picked up some flatbreads from here and they were soooo good. He said staff was nice and area was fun. Only reason I am putting 4 stars is because my husband ordered me the Carciofa and asked to not have the spicy olive oil since I can’t handle spicy food. Unfortunately the spicy oil was not taken off and I couldn’t finish it because mouth was burning to much. It all tasted so good just wish I was able to finish mine. Other than that it was a great experience.
