Bernardini Tartufata
A wild mushroom pesto of sorts, very popular in Umbria, with bits of black truffles. So good in a simple pasta, amazing on crostini, good pretty much all around. Hard to find this stuff in the states, at least a good one that’s not crazy overpriced. Here you go.

AS DO MAR Ventresca (Tuna Belly) In Olive Oil (Small Can)
After you’ve tried the standard yellow fin tuna in the jar, you can graduate to the Ventresca…The most tender and sought after part of the tuna. Again, Open the can, remove the existing oil, gently take tuna out of can and onto a plate, pour some excellent extra virgin olive oil on top (like Amphora’s ultra premium oils, also found in add on section), maybe squeeze a little lemon on top, toast up some lo coco’s bread, and dine! Seriously, do it.

Theresa Eccher, an exquisite multi generation boutique winery nestled 800 meters above see level brings an elevated level of care and “Passione”, to every bottle they produce. This Enta Rosso in fact, in order to in their view, demonstrate in its purest form what this regions has to offer, have done a 100% stainless maturation process with final refinement done in bottle in order to capture the untainted unique quality of the grape. This is unique for such caliper of grapes/wine, whom almost always see some oak. They offer such an example as well, however upon hearing the argument made for not doing so, and having had the pleasure of tasting both, I have chosen to present this example to all of you. Very disappointed for the second time. Pizza was over cooked. ordered pepperoni and sausage, there was like 1 or 2 pieces of sausage on each slice. The top of the pizza was over cooked – dark brown blackish. The dough tasted dry.
