We went in with high food expectations & Matsuhisa did not disappoint. Everything was extremally fresh, well seasoned & expertly prepared. Service was lacking we had to wait for a table (with a reservation) waited 30 mins at our table for a drink order, and things did not change much throughout the dinner.

I’ve been wanting to visit Matsuhisa for quite some time now and it did not disappoint. We had some of the best sushi we’ve ever had in Colorado. The tastes, textures, and freshness were all superb, the dessert simple but perfect, and great service from the staff. A new favorite Aspen restaurant for us.

Went for dinner here but not out first time. We always visit this restaurant when we go to Aspen. Always make reservations lol. The food is amazing. We ordered all kids of food and it was all good. At the end we ordered shaved ice dessert which was really good as well. Definitely recommend this place to anyone.

Some of the best sashimi I’ve had. On par with places in Hawaii, Vancouver, and California that I’ve tried. My local goto is Sushi Den but this place had better tasting sashimi. But you will def pay for it I mean it’s sushi, at a top restaurant, and in Aspen. I did not have a reservation. But I got there at 5pm (dinner starts at 5:30). I was able to wait at the downstairs drink bar and order drinks and then later dinner (full menu available) at 5:30. No one was there at that time. You could also walk in and wait for a spot at the sushi bar at 5:30.

If you want to eat at Matsuhisa Aspen, better make a reservation 30 days in advance. They take reservations strictly 30 days out and book up quickly. The place is always packed. The sushi bar is without reservations, but you must be waiting at the door at 5:50pm to get a seat when the restaurant opens at 6pm. The Lounge upstairs takes reservations 48 hours to the date, but the experience is not as good as in the main dining room.

WOW!!!!! A must eat at in Aspen! The sushi was absolutely incredible, beautifully prepared, it was almost too pretty to eat! Drinks were incredible, get the cilantro margarita it was the best I’ve ever had, service was impeccable! We sat at the bar downstairs and were waited on by an awesome bartender who was so attentive even though he was so busy. He was so knowledgeable and helped with all of the ordering. Can’t say good enough things about our dining experience here. Oh! And Nobu Matsuhisa himself was there that evening which was really really cool. Will be back in Aspen, Vail, and Denver!
