My love language is Outpost Eats. There are few places in Bellingham that you can eat a fantastic, think-about-it-for-a-week, dream-about-it-at-night type of meal without blowing your wallet. Affordable and addicting food with friendly staff at the truck. Easy to order online, and they text you when it’s ready — super convenient if you aren’t already at the Transition Outpost just to hang out. They have amazingly marinated meat options for carnivores, and Outpost Eats is INCREDIBLY vegan friendly (and the vegan alternatives are just as tasty). I’ve told 50% of the people I know in Bellingham about this food truck. I sadly discovered I have intolerances to both egg and pork after this truck opened, and there have been a few days I have sacrificed my gut health because a fried egg on top of the Ginger Fried Rice is heavenly. The lemongrass pork is magic. The coconut chicken is great too, but believe me, the lemongrass pork is MAGIC. Although affordable, Outpost Eats doesn’t sacrifice an ounce of flavor or skimp on portions, it’s owned and operated by folks who LOVE food and create food they want you to love.

The tofu Thai basil bowl was awesome. Tofu is crumbled, so tons of surface area for the excellent sweet-salty sauce to adhere to. The “spicy” spice level is spicy. Will look forward to finding these guys again.
