I really love pandan dessert and was excited to find the shop selling pandan waffles – reminds me of my childhood. The pandan waffles was great – crispy on the outside and a little chewy inside. Coffee is pretty standard coffee you get at any Vietnamese cafe.

My friend J introduced me to Bao when I visited Seattle. We’re both Vietnamese, so the bond naturally formed. He shared his story of starting Phin, the joys and challenges over the years, and his remarkable passion for the Vietnamese community in Seattle. When I walked in his shop, the decor, drinks, and demeanor brought to to fond memories of my grandma, grandpa, mother, and father during my childhood. Plus, he offered me nước mát – a common Vietnamese iced tea made from artichoke (atisô) and pandan leaves (lá dua). Phin’s space and offerings exhibit a rarified graciousness that’ll connect you to the Vietnamese people. I consider Bao a friend and I cannot wait to visit Seattle again. Phin is a great place to gather, enjoy coffee, and learn about Vietnamese coffee culture and history. The drinks are simple and delicious, served either hot or iced, with choice of dairy or oat condensed milk. The fact that they make their milks in house and charge the same for either option is wonderful as well. I can’t recommend highly enough.

Everytime I go to Phin’s I’m reminded of home. The salted lime soda is to die for since they make most of the ingredients themselves. Reminds me all of the time of when my mom brought home salted jars wrapped in tape from Vietnam. The salted plum soda is exactly that feeling you get when you ate a salted plum that was way too sour for you as a kid but just brings back really warm and refreshing feeling as an adult. Pandan waffle is perfect texture, coming out hot and crunchy on the outside but nice and soft on the inside. They’ve even added a fancy upgrade that brings in some more flavor punch to the waffle by adding sesame and coconut. Phin’s is a relaxing wonderful time to hang out with friends on a Sunday, enjoying the drip of all the different phins reminding me of past times and the family I love.

This is a well decorated place with a great focused menu. They offer traditional Vietnamese selections that all hit the coffee itch that you are craving but at the same time are flavorful! I also would highly recommend the Pandan waffle that is both crunchy and gooey in all the good ways! Highly recommend.
