I visited Pho Bistreaux to order dine-in and was in shock at the amount of tables that were not cleared. Maybe short-staffed, but I arrived about 2 hours after lunch. Definitely need to pay more for employees if this is what short-staffing looks like.

We were able to drop in here before heading out to the airport on a Monday afternoon. Almost all tables were full, but the ladies were able to seat us within a few minutes. We came for the oxtail pho and were not disappointed. The best dish for me was the grilled pork and shrimp spring rolls. The pork was smoky and felt like they took it straight from a BBQ grill.

Our pho came out luke warm. Like it had been sitting for awhile. We could’ve doctored up the pho with hoisin and sambal but room temp pho?!!! Nasty nasty nasty. Bruised bean sprouts and basil. Very bland . We ordered the Vinh special – strands of meat that looked like roast beef. Not the right cut of beef for pho. We wasted money! Save your money and go elsewhere.

We ordered take put yesterday. This place is AMAZING. The hostesses/waitress was energetic and super nice. The food was amazing. We had the beef pho and egg rolls. I typically don’t like egg rolls, and I ate all of them!

Spicy Beef Noodle Soup was tasty and very spicy. I liked it. But it seemed like they used egg noodles this time instead of the usual rice noodles. The Lemongrass Tofu was also not as tasty as the last time we got take out from Pho Bistreaux. I’ll give it one more try, but if it’s not improved, I may be taking by Pho business elsewhere.

I ordered the brisket pho large portion. The broth was light and temperature hot! Also, the brisket was perfectly lean. The only thing that I didn’t particularly love was the plastic chopsticks because the noodles kept slipping off and falling back into the bowl. I would have preferred wooden ones!
