Fresh ingredients, meat cooked to perfection, incredible flavors. Speedy and friendly staff. No shame when I say I could eat here every day… if I didn’t have a 9 hour drive back to KC as a frequent CO flyer, our family can’t wait to come back.

I had stopped by there last Friday night and could not get anyone to take my order nor acknowledge that I was at the cash register. I had stopped by there twice with my wallet in hand. Two employees were too busy talking amongst themselves, and the third was on the phone. It would not have been hard to make eye contact with me and smile to acknowledge my presence. As I later thought about my experience, I remembered being there another time and had the exact same experience.

Ordered for pick up. Paid $2 for cheese on my daughters taco. No cheese. Also requested nothing but chicken, and she got cilantro and onions. She’s 8. That’s why we requested none of that. Every person in there has issues with their orders being incorrect. My tacos came swimming on coleslaw, when we ordered NO coleslaw. Paid for 3 different tacos for one person, they were Carne Asada. I kind of assume pure laziness at this point. Completely opposite of what we ordered. Tried calling to let them know, and the phone rang for 5 minutes. First experience; and won’t be back. 🙁

My daughter and I were in Castle Rock for the afternoon from the Springs and saw this across the street from the shops. We first went into the Ecclesia bar and then we’re directed to the first floor for the food area. We were in the mood for Mexican – this place did not disappoint! I ordered the amazing enchilada style Tijuana street tacos with chicken. Sooooooooo good! My daughter got the stacked enchiladas with chicken and said they were good, but really loved mine the best. The flavor was spot on. Not too hot, but the perfect hit of spice and the green sauce was a delicious accompaniment. Would definitely eat here again! I’m sad I didn’t take a picture, but we were hungry! LOL!

The chicken and asada burrito bowls, homemade chips, salsa, and guac were delicious! Alex quickly and voluntarily came to my aid and helped me get my husband’s truck pulled out when it got stuck in the sandy loam by their food truck…such kind and great people! That says a lot about a business. It was our first time there, but we will definitely be back for more! Yummy!

Romo’s is hands down THE BEST Mexican food in Castle Rock. We were thoroughly impressed with every single item we ordered — and that’s saying something, as my husband is a professional chef. The Tijuana tacos are something I’m probably gonna be craving every waking moment, and the burritos are extra large, stuffed to the max, and the meat is fresh, tender, and good quality. The churros are perfect — lots of cinnamon sugar on the crunchy outside, soft fluffy inside. I seriously cannot wait to come back! I’m in love!

First and last visit to Romo’s Street Tacos. Went to the food truck, one person in front of us, said 5 minutes for our order, took 15 minutes.

The BEST street tacos in castle rock is nestled inside the roots of Ecclesia. Hands down. Romo’s serves authentic flavors, fresh ingredients, and delicious salsas!! The guacamole is always on point, queso is a crowd pleaser,… need I go on?! If you like tacos, you MUST get to know the Romo’s menu!

Every time I’ve been here there listed hours are incorrect. Arrived at 11:00am on Tuesday, Romo’s has it listed they open at 10:00am with breakfast items. I walked in to a line of 5 people all waiting. After about five minutes someone finally walks over and states they are not open and when asking when they do open just didn’t answer. Lazy workers. Lazy atmosphere and who knows how the food is. Not coming back and wasting more time at this horribly run venue.
