This is my go to pho spot in Vancouver. Their regular pho is great, a good rich broth that doesn’t disappoint,quality veggies and cuts of meat. Their sandwiches are also great, but what steals the show for me is their Bun Bo Hue (pronounced bun bo way). If you like your pho spicy, you owe it to yourself to try this dish. It’s not available in all pho restaurants, but once you have it, there’s no going back. It will typically be served with a thicker noodle which is traditional. I prefer the texture of the thinner pho noodles, so I order pho and request they substitute in the bun bo hue broth and they are happy to do so. Delicious, spicy, lemon grass goodness. The owner is always super friendly as well!

Wow! Wow! Wow! Ruby Pho is amazing. I’m a first gen full blooded Viet girl and everything I have had here is off the chart good. I don’t usually order pho at restaurants because I make really good pho but I had to try their special with the beef rib and I would definitely pay for that again. I have had the Mi Quang (turmeric noodles) which is not on their printed menu and it is better than my mom’s! Mi Quang is not a dish found at a lot of restaurants and I was blown away with how good it was. The banh mi is amazing as well with the crunchy outside and soft inside. If you want to have your mouth to travel to the best of Vietnam, go here!

In my eternal search for the perfect broth, I have searched near and Pho. I have started to run out of places in central Vancouver and find myself wandering further afield. Ruby Pho is pretty new and it seems like a lot of the buzz is based on their sandwiches. My first impressions of the decor was that it was just a touch on the generic side, clean, but not a lot of character. The waiter was pleasant, but not as friendly or welcoming as so many of their competitors… Not bad, but not particularly enthusiastic. None of that is particularly important if the Pho is amazing.
