Nothing is fancy, over the top, and glitzy, but every bite, every dish, and every piece of nigiri is just about perfectly balanced, deeply rich in flavor and texture, absolutely fresh from the best possible ingredients. My favorite omakase in New York to date if you’re willing to splurge. Every detail in this sushiya was impeccable from start to finish. The selection and quality of fish was impressive, the standouts to me were the the akagai, aori-ika, and aji. The chef himself was incredibly friendly and excited to tell us about the grade of nori he was using. It’s clear that Shion Uino is a master of his art.

Chef Shion Uino’s intimate knowledge and execution of traditional edomae is an experience everyone should have. Every dish and nigiri were perfectly curated to showcase the quality, simplicity, and flavor of the fish. If you are lucky you may get a rare special piece or dish sourced from Chef’s hometown of Kumamoto. This was a top dining experience and I cannot wait to return.

The food was very good but you expect excellency at this price point. Also as another guest commented, there are items off the menu that you can add later, like a $68 uni that chef says is the best… how can this not be included in the omakase? Uni was excellent but overpriced. The menu felt short to me, I expected 4-5 pieces more of sushi.
