SIVAR is slang for El Salvador, to the local population of Central
America. This concept is a sister company of Monse’s Taste of El
Salvador, located in Old Colorado City, which offers a specialized menu
celebrating authentic Central American Cuisine. The name is special
to the owners because it represents Monse’s culture, passion for food
and her Salvadoran roots.
This concept incorporates traditional central American favorites
including pupusas, empanadas, plantains, and more. SIVAR is 100%
gluten free and will feature a variety of traditional meat, vegetarian and
vegan entrées, plus starters, specials and a mouthwatering Sunday
brunch.

Sivar serves up Central American food and is a sister restaurant to another delight in the Colorado Springs area – Monse’s Taste of El Salvador. Sivar is a new establishment located within “The Well” food and drink hall. Papusas, Empanadas, and more can be found on the menu. Everything was delicious, the service was great, and we really enjoyed the low-key coffee shop vibes of The Well. The only drawback is the food was a bit pricey (but what isn’t these days??) for the amount of food we received, but for how fantastic everything was we will certainly come back. Be sure to try Monse’s as well if you have not already done so!

Second time having Sivar. Our first experience was excellent with delicious nachos and a pupusa. Lots of cheese and the dishes arrived as described by the menu. Second time here we got the nachos again and yuca fries. The fries were sadly the driest and least seasoned yuca I’ve ever had. The nachos also took a hit as the onions were no longer pickled and the cheese was lumpy and not as generous in portion.

I so wanted to love this place because we are big fans of Monse’s. However, we had a very odd experience here. We ordered two pupusas, one with chicken and one with chicharrón. When we got our order, there was no meat in either pupusa, just cheese. We picked them apart to make sure we weren’t just not seeing it, but there was no meat. So my husband returned to the counter to show the cashier and ask for our order to be remade. The cashier insisted that the meat was just ground up on the inside, but my husband showed her that there was no meat inside. The cashier said that the chef told her there was meat and she refused to do anything to correct the order. So, we felt ripped off because we paid nearly $30 for cornmeal and cheese. It was very bizarre that the employees were insisting that there was meat in our food when we were showing them, and they could see with their own eyeballs, that there was no meat and we didn’t get what we paid for.
