I was extremely surprised and pleased to find authentic ‘Barbacoa Roja’ style, this is, hands down, the best barbacoa of this style I’ve had, and I am Mexican! I am sure they use pencas (Maguey Leaves) and firewood to cook it. The meat is butter-like tender and it has delicious bones with it, corn tortillas are tick and hand made. Consomé is very tasty and warm, perfect for rainy days.
