Established in December of 2019, The Cowboy Capital Saloon & Grill is a family-friendly fixture in Dodge City, KS paying homage to the area’s colorful cowboy heritage. We converted an early 1900s mercantile building in the heart of the city into this unique twist on an Old West steakhouse and saloon because we felt it was a natural fit. Our primary goal is to serve our patrons with a playful, memorable, and historically rewarding experience while being part of the wonderful city and heritage of Dodge City.

We had desserts here and they were fabulous! We tried the peach cobbler, waffle with ice cream, and carrot cake. All of them were top notch. Our server Tanya was excellent. She kept our glasses topped up and made great suggestions to us!

Our server was so nice. We had the tumbleweed and wings as appetizers, and they were great. Ordered the capital burger and ribs. I was disappointed with the burger it described to have brisket ends, and it didn’t. It had shredded brisket it also had a stuffed jalapeño wrapped with bacon, the jalapeño was not cooked, it was still hard. I had “roasted corn,” and they brought me what I assumed was cream of corn. The ribs were great with a side of fries. Also, I tried their whiskeyrita, and it was great.

The Cowboy Capital came really highly recommended. I really wanted to like it – was so excited when the ribs came to the table I couldn’t believe the size – I was like YESSSS! When I pulled them apart fell apart really easy…again YESSS! Took a bite and the entire middle was cold. NOOOO! So had to ask that they go back and be warmed up. Server was really nice and took them back and several minutes passed and they were returned they were a bit warmer but still cold. So I didn’t want to request anymore at this point everyone at my table was finishing up their meals.

My wife and I ordered the full rack of ribs with baked potato and baby carrots and the chicken fried steak with mashed potatoes. The meal came up to $57 and the portions were HUGE!! Service was awesome and homey atmosphere.

We had the rib-eye steaks with mixed vegetables and mashed potatoes and gravy. The steaks were tender and cooked perfectly – one of the best I’ve had in a long time. The steak was large – I had a generous serving at lunch with enough leftover for breakfast the next day. The potatoes were perfectly seasoned and just lumpy enough to be homemade. The vegetables were basic but good. Our server was attentive and friendly and she made it a pleasant experience. We will be back.

The food was aging, and were very large portions. We were in a group of 10, and I think our server was fairly new and maybe a bit overwhelmed, but we got everything we ordered and the checks were all correct.

I highly recommend that if you are by yourself that you take your experience with a grain of salt. The waitress who served me was not rude but not as attentive as she could have been. I had a starter order for the stuffed jalapenos. And she assumed that’s all I wanted. I had to grab her attention to order food after my starter. I did notice while talking to the other staff that they sprayed some sort of non-stick spray onto the burger patties before throwing them on the grill. Don’t know if I’ll be back

Update: my family had a pleasant enough experience that I invited my friends for a night out. The service was subpar to say the least. The young lady seemed to not have much of an idea how to do her job. We were there for 3 hours, never could get a drink menu but we WERE told it existed. Food wise, the only thing we could agree on was the meat being good. Everything else was okay… but not stand-out like before. I ordered exactly what I had before and it looked nothing like the picture below. We made it clear how far my friend’s had driven to be there and that we were there to socialize, we were clear that we were in no hurry and that we did not see each other often. Still, about an hour before close, still ordering alcoholic beverages, etc, we started receiving death glares that were clearly rude invites to pay and leave. To be clear, at this point there were still other customers.

The food was meh, I’m not usually 1 to complain about too much food but I ordered a chicken salad and it was HUGE. Like I ordered a salad for the purpose of watching calories…this must have been a 2k calorie salad. Also my chicken tasted a bit like fish, like cooked in the same oil?
