A new wine using grapes from two vineyards that Thibault farms in the Morgon cru. Grape: Gamay Vineyard: Les Charmes (40yo vines) and Corcelette (50yo vines) on granite and schist. Farmed organically by Thibault himself Making of: The grapes are hand-harvested and then undergo the traditional whole-bunch carbonic maceration. Spontaneous fermentation, aging on fine lees in concrete tanks for 8 months. No fining, no filtration, max. 2ppm of SO2 added at bottling. Personality: juicy and youthful yet elevated take on Morgon.

TREJ is dialect for “3.” indicating the three wines blended to make Trej, Nebbiolo, Barbera, and Dolcetto. Designed and blended to have the structure of a Langhe Nebbiolo but with the sharp tannins smoothed over by the fruit of the Barbera and Dolcetto. This everyday style wine has an abundant of character that makes for an enjoyable and intriguing experience.

Dense purple in color, this wine opens with aromas of dark cherries, blackberry preserves and a dusting of coco powder and clove. The use of Grenache and Syrah adds to the structure and complexity of the wine. Like a proper whole cluster pressed rosé, the color is a pale pink/peach. It has both wonderful texture and vibrant acidity that keeps it fresh and alive (refreshing!) Notes of peach, apricot and apple blossom are accompanied by a mouthwatering acidity.

A crisp and pleasantly aromatic white wine. Gentle acidity with notes of tropical fruits. Our Rkatisteli label honors Lela, one of Georgia’s legendary woman warriors. In 1659, Lela, the daughter of a famous warrior, stepped forward to join the effort to liberate Georgia from foreign warlords, but was refused because she was a woman. One warrior, Kviria, knew that the effort could not succeed without Lela’s help, and devised a plan to strike by stealth. Lela perished in the fray, but not before opening the gates and leading the way for a Georgian victory.

My friends and I had SUCH a great experience here last night before dinner! Brittany Opperman was singing live music with her guitar and her voice was angelic and perfect vibe for the space! Our server Alex was so sweet and accommodating and many of the cocktails could be recreated as mocktails. We didn’t try the food since we popped in before our dinner reservations but the menu looked incredible. The hostess, I unfortunately can’t remember her name, was so nice and welcoming and explained how the pour your own wine card worked. 10/10 recommend!

This was our first time visiting Uncork. Took my wife here for her birthday. They surprised her with a card and complimentary glass of champagne. The vibe was very nice and the self-serve wine bar concept was different in a good way. We had the meatballs and stuffed mushrooms which were both excellent. The wait staff and manager were very nice and attentive. Would definitely be back and highly recommend.
