Nice restaurant with a good atmosphere. Let’s start with the chips and salsa. Very good. The chips were warm, the salsa had a nice tomato flavor with just enough spice. We also ordered a cup of queso, which was good as well. We both got the 3 enchiladas plate with 1 beef, 1 chicken and 1 cheese. All 3 were very good. But the chicken with the sour cream sauce was my favorite. Our server was very good. Food came out quick. We’d definitely go back if we’re ever in Liberal again.

Started off with requesting to have table cleaned due to food particles on the table and the condiment holders. Waitress said she knew the table was sticky. Mentioned it would be easier to move to another table. We did as she suggested, but it was the food particles that were the issue, not the sticky varnish.

We stopped here on the way home from a job. I had the Vargas special and my wife had the Sonora plate, we both VERY MUCH enjoyed the food and attentive service. There was initially a small issue in that our server did not speak very much English, but we got over that. This is a delightful place, a fabulous building, and great staff. We would absolutely visit here again.

Quiet family style restaurant. Menu is extensive ranging from many chicken, pork, steak, seafood choices (4-5 menu pages). Served with fresh chips & salsa before meal. I ordered a chicken fajita chimichanga, it only came with chicken & cheese inside no red or green peppers or onions (kinda disappointed). Overall not bad but not for me

It had been atleast 2 years since last dined here. After our meal we left commenting to one another why. We drove 30 miles for Mexican food but now wish we had made it ourselves at home. Nothing but bland ground beef on a taco? What happened to the onion, lettuce, tomato and cheese? This restaurant lacks in flavor. There simply was none. Now we know why parking lot was empty at dinner time.

Not impressed at all. I ordered the fajitas. They brought everything out except the tortillas. They were meh. When they brought them out they didn’t give me a plate. I resorted to using napkins to avoid putting the food on the bare table. I had to ask for my refill on my drink.

Very good service, but very disappointed in the salsa, no spice very bland tasting. Same for the guacamole, very plain. If you are a person who doesn’t like spice. You will like this place.

My girlfriend Maggi and I were riding motorcycles on our way to Santa Fe, NM from Kansas City and we decided to stop in Liberal KS for the night. It was about 5:00 when we decided we wanted Chili Rellenos and found the Vargas Restaurant made them. We arrived and were seated by a very accommodating hostess, within seconds, here comes the Chips and Salsa. Followed right up by our server, Matilda wanting to take our Drink order. For Dinner, Maggi ordered the Chili Rellenos and I opted for the Ala Carte, Pork Burrito and a Chicken Taco since we were splitting one of the Two Chili’s Rellenos. Wow Oh Wow, we were so happy with our choices. The Special Red Sauce on my Burrito was incredible and the pork was tender and juicy. The Chili’s Rellenos were Deep Fried in a Crispy Crunchy Batter and filled with Beef and Cheese and the Pabano Pepper was Tender and Spicy. I Love This Place
