Now we’re talking. The 2007 Trento Metodo Classico Extra Brut Giulio Ferrari Riserva del Fondatore (disgorged in 2018) is a pure expression of Chardonnay. The grapes were fermented in stainless steel, and the wine ages in the bottle on its own yeasts for at least ten years. Perhaps the secret of this flagship sparkling wine is the carefully measured atmospheric pressure that is applied. The medium to full-bodied wine is soft and yielding yet determined and firm at the same time. I just love the lavish intensity of the warm and balanced 2007 vintage.

Guiborat is helmed by Richard Fouquet, who grew up outside Paris and returned to his family’s vines as a young man. The 100% Chardonnay ‘Prisme’ is comprised of grapes from 3 parcels in Cramant and Chouilly, farmed organically, and vinified in tank and neutral barrel, and spend 44 months sur latte, and bottled with 4.5g dosage. Based on the 2013 vintage, the wine has a pale greenish yellow robe, soft mousse, and fine bead. The nose offers aromas of wet stone, green apple, orange oil, and shortbread. Vietti Barolo Lazzarito 2015
Opening to a beautifully floral bouquet, the 2015 Barolo Lazzarito delivers fragrant tones of violets, wild rose and a touch of orange blossom. As is the norm at Vietti, I tasted this wine and then wrote this review based on impressions gained from two samples—one opened several hours before my tasting and one opened at the moment of my review. Those floral notes came forth with increased intensity and clarity in the bottle that had been opened longer. The bouquet continues to surprise with touches of black fruit and freshly milled white pepper. However, like many wines from Serralunga d’Alba, this expression from Lazzarito reveals a pretty inner paradox. Those ethereal and balsamic aromas cede to a dense and rich mouthfeel, characterized by structure and power. Those two sides of the wine reach beautiful parity and lasting harmony.

Estate-grown, hand-harvested grapes are fermented in temperature-controlled stainless steel tanks with approximately 15 days maceration. We stopped here for a quick bite before heading to a show at Stanford. We walked in around 5:30 pm and were seated promptly. Vina Enoteca has great food, amazing staff, and the prices are reasonable (We actually saved a ton of money eating here instead of eating at the venue). The drinks are very good and they definitely do not skimp on the alcohol . We will be back!

Amazing, surprisingly quick service, Alberto was super nice and accommodating. Great selection of both unique and authentic dishes, and a plethora of drinks (more than I can name). Food was amazing, with some great tasting pasta and one of the best pizza crusts I’ve ever had! Ambiance is superb as well; both outdoors and indoors. Definitely recommend for a great night out.

Very disappointed in the whole experience. The bolognese pasta was bland and had the appearance of a blob in the middle of the dish. Not at all appetizing. The room was very noisy making it difficult to carry on a conversation or hear what the waiter was saying. I ordered what I thought was chocolate hazelnut gelato. What I got was hazelnut gelato with a chocolate cookie that barely passed for ice milk. Won’t be back. Totally overrated.

Everything but our pizza was great – it was a little dry with not enough cheese. Portions were a bit small, my group of four all finished dinner fairly hungry so we all got desserts. That seemed to make up for it, desserts were incredible. Would strongly recommend the tart (not pictured because we ate it too fast.)
