Our story began many years ago with our grandfather Jose Flores. He lived in a small town in Mexico called Juchitlan, Jalisco. From a very young age he worked in his father’s fields and Carniceria. He did everything from butchering to selling. Now, we, his grandaughters, continue the tradition.
Many years later in the small town of Tarachi, Sonora a young man left to pursue his dreams. After many years of hard work and finding the love of his life, they opened their first Carniceria in 2003.
Serving Pueblo, Colorado for over 6 years and Tucson, Arizona over 3. When the two families came together, they opened their very 1st Sonoras Prime Carniceria & Taco Shop here in Colorado Springs.

As a former chef from Beverly Hills California and critic who moved to Colorado, I am grateful to have a store that cares for the authentic freshness and tasty food this place has to offer. The cleanliness of the store was right on Q as the employees participated even during every stop to help customers. The prices are better than other fast food restaurants’ links. Every food item was delicious as enjoyable to consume without complain. To you who said, “It is bland,” they dont understand that you can make it as salty as you want if you add salt, pepper, lime, and sauce on your own. The restaurant needs to make the older eaters happy too, and sometimes, too much seasoning may hurt an unhealthy person, unlike yourself. I will continue going to Sonora’s to eat their food. I just hope they won’t change in time because that can happen.

Hands down the best place to buy steak and marinated meats in town (even beats Costco prices!). We regularly go to Sonora’s meat counter and are always met with friendly, familiar faces that happily accommodate our crummy Spanish. Today, I brought friends and tried the birria taco. I had banked enough points to get a free bean-and-cheese dip. Everything was delish. The dip was made with white queso and was very yummy. My friends tried the Arizona burrito (jam packed with ingredients including French fries) and the birria ramen, which was HUGE! Both had enough leftovers to take home for another meal. Fast friendly service even during the lunch rush. The salsa bar is wonderful so you can build your taco just how you like it. I had barbacoa tacos and while the meat was tender it was bland and lacked any real flavor profile. Close to work though and prices were good.

We were very excited to try this place but I was highly disappointed. Our salsa looks like it had been eaten. My chicken was very bland, tortillias were hard and beans were everywhere, but the rice was good. My husband’s order looked good and tasted ok, but not worth the price. We love Mexican food but will not be coming back to this place.

This place puts out amazing tacos and burritos! And the people are SUPER nice. Be prepared to be greeted with an enthusiastic “hola amigos!” Just a great place to grab quick lunch. Be warned though, seating is limited. Overall, I think I found my new favorite taco spot!

Used to going to other meat markets/ carniserias and I have never received just fat on rib tips like I did here at Sonoras Prime. Not the first time I have had issues. Location is very convenient but $9.99 per lb for fat is not good business. The carniseros should know better than to sell fat to loyal customers. Not happy

So good!!! I ate a taco but ….so good. I put the cause that comes on the birria tacos on them and so good! My favorite is the birria tacos! My husband forgot the cheese and sour cream so I added it but when do it so much better!

Most excellent food here, and great grocery and butcher section for those who need. I am grateful the staff serving speak English well, which I do not expect, but it means an expat like me can ask about the food and they are happy to explain it to me. The quality is top notch, I even ask for less cheese in my tacos birria and they are only too happy to make the change for me. I must say that young people working here are clearly taught excellent customer services, they are polite and friendly. I am happy to bring out of town friends and colleagues here for a Mexican treat! Thanks.
