A food truck in a parking lot. What the atmosphere is lacking makes for excellent BBQ (and plenty of parking). I literally went back for seconds to have leftovers (the first order didn’t last long). Excellent brisket, homemade BBQ sauce, fantastic sides (especially the beans). Sandwiches are served on Martin’s Potato Rolls to make things that much better. I’ll be sure to time trips through the area to be on Wednesdays, the only day this truck is open (for now?).

I’ll preface this post with the fact I’m a Texas boy. I Pre-ordered the brisket and pulled pork however I was apprehensive of trying the brisket. County road provisions did not fail me. The way the brisket is prepped and smoked is the epitome of Texas BBQ. The crusty peppery bark and the smoke ring are all flawless. Everything is well seasoned so if you’re into bland food, this place isn’t for you. Great job County Road Provisions!

The absolute best Texas style BBQ outside of Texas. Brisket is a must. Ribs are fantastic and the pulled pork is excellent. Follow them on social so you know when at where the big black food truck is at.

I was a proud backyard pitmaster, serving my family and friends some excellent meats…until today. I had ribs and brisket from County Road Provision and I’m now questioning my life choices. I’m not sure I’ll ever light my pit again. Way to go guys, I’m emotionally ruined.

Texas style brisket is good as anywhere you’ll get in Texas. He makes his own sausage that’s great. One of the things that’s crazy is his smoked turkey. It is fantastic, always moist and smoky. His pulled pork, pork chops and pork ribs are great too. The jalapeno potato casserole (JPC) is a great side dish that I’ve never had anything like at any other place. Sometimes we get sandwiches, sometimes we get meat by the pound but we’re always happy either way. Usually he always has brisket and pulled pork and rotates one or two the other meat in. The best way to follow is his Facebook page: County Road Provisions. He sells out a lot of days by 1:30 or 2:00. P.m. It’s best to order ahead, especially if you’re going to be placing a big order

Michael Brooks makes the BEST BBQ ever! He catered a party for me and everyone wanted to know who and where he was. If you are not using county road provision for your BBQ needs you are missing out! Great locally owned business! I used these guys for my wedding and I got so many compliments! Every one enjoyed there delicious brisket! They knock it out the park every time! They have both Quality and quantity. Not to mention great and professional customer service. Flew all the way from Texas for this and it was worth the miles! Starting with the sides all are fantastic, in order of least favorite to Dear God: potato salad tasty good flavor; the slaw great texture light on the mayo, but a lot of great taste; the mac and cheese was fantastic, milky and sticky, crunchy baked bits as well; and now last but the absolute best was the baked beans. Perfect and best flavor I’ve ever tasted! Moving to the meats, brisket perfect smoke and great ring, dry rub was delicious, had moisture dripping out. The beef rib too was perfect and seasoned great, fell off the bone with a light tug. The smoked sausage was delicious and moist, great pepper flavor and juicy. The pulled pork was great according to my wife, I ate too much to get a try, but there are leftovers so I will. Seriously if you are a local or a tourist and looking for true smoked BBQ find @County Road Provisions ASAP.
