In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas.
We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. Nice BBQ. I don’t recommend getting the sandwich since the bread becomes soggy. They offer unlimited bread and hot bbq sauce so just get the meat on the side. Coconut pie is a must order

Drive thru ordered 3 meat plate with ribs, sausage and BBQ chicken. I ended up with fried chicken instead of ribs. They gave no BBQ sauce with the meal at the drive through. The BBQ chicken was dry and the sausage was not good quality. The mac and cheese and potato salad were good, the pinto beans were not so good. Lots of hard beans in there. This was the worse meal I have had in a while. Will not be back.

I love Bill Miller restaurants. I have been ordering their brisket tacos with beans and cheese since 2014. My only comment is sometimes the guys who takes the order don’t pay enough attention or in rush. Also they need not to serve the dry parts of the brisket. Over all I like the restaurants country style and their marble brisket is the best

Love Bill Miller’s food! Especially the breakfast bowls and breakfast tacos! Normally the brisket is juicy and delectable! This time though, the brisket was dried out, like it was time to toss it out and yet they served it anyway… But they still get 4 stars because it’s usually fantastic! I’ll still be back.

Very dissatisfied with the salads at all Bill Miller locations, especially the one on 1604/281. I have been a long time customer. You Pay $9 for a salad and they are very skimpy. I have complained about this in the past but nothing has changed and they are still the same. I have recently tried the salads at Moe‘s barbecue and there is no comparison. Moes barbecue salads are full to the top with lots of lettuce tomatoes and cheese. Chicken on the side. They are delicious!!
