This post is a long overdue. I have been a fan of this place since I was a kid and recently was coming through town a little later than expected so I called and spoke to the owner of the restaurant, and she made special arrangements for me to receive my hot links. This is what small-town America is about, customer service is still very much alive at this place. Even though the ownership has changed over the years, the quality hasn’t, from top to bottom I feel like it’s still the same place that I walked in to many years ago. The service was great!!! Candy and the two other ladies were super friendly. We talked about everything from Jesus to Gilmer history. The building is definitely something from yesteryear. It looks like an old factory building from a century ago. When you go inside, it seems little has ever changed in that place. It is always neat to see something outdated still going. I like the U.S. maps on both sides of the store where you can sign your name in the area you’re from!!! I also liked the sign that read, “$5.00 fee for whining.” No wimps allowed there. Also, the board game in the box of GilmerOpoly was pretty cool. The food was ok. I’d give it 3.5 stars if I could, but there is no rating for that. The beans and jalapeño links were my favorite things to eat. The ranch style beans had bbq sauce in them. The jalapeno links had some heat to them. They made for a good sandwich. The links were different than what we’re used to. The meat was softer, and the casing wasn’t dry like I’ve always had. I’m not sure it was pork or hamburger meat. Next time we’re in Gilmer, my wife and I will be back!!! I can’t forget to say they sell Doc’s Hot Links T-shirts too!!! Thanks to the staff for making it a pleasant experience!!! They couldn’t have been any better.

Original and Jalapeño Hot links are made there on site daily. You can order them up ready to eat there with all the traditional sides. Saltine crackers, orange cheese, jalapeños, white bread and their house hot sauce. I typically order them raw freeze them and smoke them myself. Definitely a local delicacy that I’m unable to experience where I currently live. It stands to reason why hot links are known as East Texas Caviar and Doc’s makes them the best.

A staple of East Texas that never disappoints even after being in business for 52 years. I have been going there for years. As a kid with my Dad and as an adult in my own. The original hot link is excellent. Be sure to try to the Jalepeno link as well.

How on earth have I not reviewed Doc’s yet? This place is an East Texas legend, an absolute staple! Iconic hot links, you won’t find links like these anywhere! They’ve recently added jalapeño cheddar links and boudin to their menu as well! There’s just no substitute for a trip to docs! Get yourself a grape or orange soda or a big red, a jalapeño, a slice of cheese, a slice of onion, a small cup of their chili, and 4-5 links and you’ll be set!!
