This is a do not miss restaurant/food truck. Is actually better than just about any Mexican restaurant I’ve been to, and I’ve been to a lot. The quality of the food is outstanding. The flavors are complex and delicious. All the right seasonings have been used. We enjoyed it the burrito dish that comes with the most delicious Mexican rice and refried beans and we ordered the al pastor. Food is made to order and we were asked if we wanted pineapple in it and said yes, glad we did. We got the five tacos as well. They are street tacos style, all the tortillas are so delicious, we were able to choose two different meats and we tried the carne asada. Two sauces were provided on the side a green and a red. They were delicious. Everything is 100% homemade clearly. The food is definitely made authentically and with a lot of love. It was spot on. The meals came with watermelon in their own separate container and were the perfect ending to the meal. This is definitely not fast food even though it was prepared to order and it was pretty quick. Definitely we will make this our go to stop when traveling this stretch of highway. You should too.

The tacos Al pastor and Barbacoa were so flavorful and succulent, definitely some of the best I’ve had anywhere. Chicken and chorizo quesadilla was also amazing, and even the beans and rice were amazing. A green salsa and spicy red/orange salsa came with the food and had loads of flavor and heat. Must stop if you are traveling on I-70 near Colby KS. The people run it are very friendly and sweet as well!

This is our second stop here and we LOVE it. Our family lives in Colorado and we drive through Colby often from kentucky. We were pleasantly suprised to find this food truck with excellent tasting food, great options, and enthusiastic servers! We placed our order over the phone as the GPS said we’d arrive 10 mins before closing. They happily took our order and waited for us to arrive and pick up our meal! We will most definitely make this our regular stop!

Somebody did up a Mexican food trailer & completely decimated all the brick and mortar restaurants in Colby, Kansas! Seriously proud of these people’s accomplishment. Wonderful Mexican food. Terrific quality, tasty, and reasonably priced. Service includes a ‘runner’ to deliver the order to your vehicle. The empanadas are killer, as are the street tacos. Discovered this place by accident & will not go past Colby without stopping. Just a couple minutes north of I70. Brilliant!!!

We were traveling through the state and saw that this place had a lot of good reviews. This place lives up to the ratings it’s received, it’s easily some of the best Mexican food I’ve had in my life! No complaints, though I will say that the chicken+chorizo tacos were our particular favorite. The tamales were excellent as well. 10/10 would recommend to a friend (or stranger, for that matter…)
