We went to Carbon on a Sunday evening and they weren’t empty but also weren’t terribly busy. There is very limited indoor seating (which is dog friendly) but we didn’t have trouble finding a seat. We tried the Texas Platter which is a 1/4 lb of most of their BBQ meats except chicken wings and sausage. You also get to pick 3 sides so we had the mac & cheese, jalapeno corn bread muffin, and 30th street corn (kind of like elote corn but not in the cob). Overall, we were underwhelmed. The platter came with brisket, pulled pork, ribs, pork belly, and roast beef and all the meat was dry. I was very disappointed since I was really looking forward to the brisket and pork belly. I was expecting them to be juicy considering how fatty brisket and pork belly are. The sides were tasted good but were very salty so I was only able to take a few bites before I couldn’t eat anymore. If you want good BBQ, I would recommend going to Grand Ole BBQ Y Asado instead, which is only a few blocks away.

The food here was really good. We got the sampler plate to share and everything on it was great! All the sides were really good too. My favorites were the ribs, brisket, and Mac and cheese.

Tasty, smokey barbecue in a casual, airy environment with welcoming staff. The roast beef was moist and chewy, and the smokiness complemented and enhanced the flavor of the meat very well. The brisket was drier with a firmer texture. The natural flavors of the brisket were a bit overwhelmed by the saltiness and smokiness of the barbecue process, but it was still good. The Cole slaw had a spicy kick to it, and the beans were meaty and tasty. Two house made barbecue sauces are available to complement your meal. The red sauce is sweet and rich, while the Carolina sauce is mustard based and on the sweeter side. They are both delicious, but the meat is prepared so well that it’s kind of a shame to cover it up with sauce.

Carbon is an amazing local BBQ spot with great food and kind service. Paige is an wonderful host and the staff is super friendly. Not only is the food and service great, but they also have an old-school free tabletop video game with all the classics. This is my new local spot for sure!!!

Been wanting to try this place for a while and I’m glad we stopped by. Took the family for an early Father’s Day dinner. I ordered the brisket and it’s safe to say it’s the best I’ve tried. I had a taste of my daughters short ribs and pork belly, both equally as delicious. We’ll definitely be back

Very nice BBQ shop. Ordered the Texas platter that had a sample of multiple items. Pulled pork, slow cooked pork ribs, brisket, prime beef roast, pork belly and 3 sides, onion rings, 30th st corn and jalapeno cornbread. All very good! Best of all were the sauces, mustard for the pork sides and a sweet red for the beef sides. Also ordered the chicken wings, very good!

Wow what a big sandwich! My pic is of ONE order whoa. Not a bad BBQ spot. They have a fish tank inside but it is actually filled with kitchen staff complete with accurate decor, pretty cool.

Average food and for the price seems like a waste. The ribs were very very sad, they were so tough and dry and lacked any flavor at all. Brisket was okay, again I would have preferred some more flavor. Only side I would recommend is the corn, mac and cheese tasted like it came from a bag.
