As a Taiwanese person, it is refreshing and delightful to see a Taiwanese restaurant in Colorado Springs. Naturally we had to try it! We ordered the popcorn chicken and pork belly sliders and both were really good and a good portion for their price. Their take on Taiwanese food is fun and we will come eat here again to try more of their menu!

Incredible Taiwanese street food! My wife and I stopped by for a snack and ordered the popcorn chicken and king oyster mushrooms to share and both were absolutely amazing. The seasonings on them were fantastic and the sweet chili sauce they came with enhanced the flavors very well. We can’t wait to return and try other items from the menu!

Formosa Bites is a great food truck for reliable brewery food that has bloomed into a brick and mortar location at The Well food hall in Colorado Springs. And they are off to a great start. The signature beef noodle soup is a worthwhile indulgence, and I especially loved the tangy cabbage slaw that comes with it.

First time trying Formosa Bites and will not be the last! We enjoyed one order of pork and one order of veggie dumplings which were made with love. The beef soup was AMAZING. The beef was unbelievably tender and the broth had us drinking out of bowl and try the mushrooms!. The owner stopped by to chat with the family and he is so kind and you can tell puts his heart into his food.

If you’ve been to The Well and haven’t tried Formosa Bites yet, I promise it’s so worth it. There’s so many good options on the menu. From the potstickers to the pork belly sliders, you’re bound to love anything you get here. The sweet potato fries are so delicious. The sweet roll buns are a nice sweet treat. And the chili oil is so good. They even started selling it. Everything here is made with hard work and care for the customers. Definitely check this amazing place out!

Colorado Springs just became a lot greater with the addition of Formosa Bites! I am from Taiwan, and the dishes they serve here are totally authentic and amazingly tasty! We were thrilled by our dining experience. The fried tofu (the special) was EXCELLENT—it is rarely done as well as this: super crispy but thin outside (not chewy) and tender and warm inside. With a great sweet chili sauce. Popcorn chicken is flavorful and peppery in the Taiwanese way. The veggie potstickers are nice and gingery, more complex in flavor than usual dumplings. And the sweet potato fries with “plum powder” were the best fries we’ve had in a long time. Super tender and wonderful flavors. They brought out each dish one at a time so that it was super hot (to maximize texture, tenderness)—in the true Taiwanese way. Food is best when HOT! We did not have the pork and beef items, but those are essential Taiwanese dishes.

Formosa Bites is terrific. So far, I have only tried the popcorn chicken and the wontons, however plan to go back and sample other offerings. The owner/chef, Terry came out to check on how I liked his food and to give me an overview of how he makes everything from scratch. This is my new favorite place!
