Santa Elenas started as food truck experience led by Chef Rodrigo Quijano who hails from the great capital of Mexico City, and has now partnered with Equinox Brewing to bring you a collaborative dine in experience. Mexican classics get a southwest twist using smoking techniques to create new flavors and enhance ancient traditions. Instead of Mexican street corn with boiled corn, we smoke the corn in apple wood for a unique experience. Expect changes in menu as we work with the season and local farmers, artisans, and purveyors to source products that we are are proud to work with.

Located in Equinox and across the stage. Interesting taco flavors that blend well together, along with a generous quesadilla option and for desert, flan. Food was good, a bit pricey though.

Absolutely delicious! The owner (Rodrigo?) was incredibly nice and clearly very knowledgeable about food. Prices were cheap, food was great, the owner was passionate and nice. What more could you ask for?

We booked Santa Elenas for our wedding party this past October and we were thrilled with their food and service! As a Celiac, it can be tough to find a food truck that makes GF options. Santa Elenas worked with us to make a custom menu that worked for me. Their tacos are delicious and our guests raved about how good the food was at our party. Rodrigo is wonderful. We highly recommend Santa Elenas, particularly for a special event and for GF folks!

Food is some of the most flavored and delicious authentic Mexican food in Fort Collins. Owned by a sweet local family and a chef who has an amazing palate for seasoning. You won’t regret eating some of this delicious food.

Wow, soooo delicious. As if the beer at Equinox wasn’t enough to make you go on a side quest, the fact that Santa Elena is in the same space makes it doubly worth the trip. The duck carnitas and flan are some of the best I’ve had – and I lived in th SF Mission district for many years. GF and veggie options. Highly recommend.

This guy is a trained chef with years of high end culinary experience, and it shows with the quality of food that he puts out. Using local, seasonal ingredients, everything is fresh and prepared perfectly. Even when they are swamped with orders everything was coming out looking immaculate and tasted even better. Go see him at Stodgy Brewing on Tuesdays and you won’t be let down.

Best food truck in NoCo, by far. They use seasonal, local ingredients to create amazing flavors. I ordered the taco plate with the hazel dell mushroom tacos and trout tacos. Highly recommend! But warning they are a little spicy!!

Really enjoyed this food truck today- husband had one each of three meats for his tacos (Elk chorizo, Duck carnitas, and Brisket adobo)- he said he couldnt decide which was best because they were all great. I had the brisket in the greens bowl. LOVE the Oaxacan Pico, so many flavors! When I went back for a second bowl and explained I was going to take it home for a meal the next day, they very kindly gave me some great tips to help it overnight well in my fridge. We’ve also had tamales when they were on offer in the past and enjoyed those as well.
