In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas.
We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. JUST PLAIN AND SIMPLE BBQ DONE RIGHT. Bill Miller never disappoints. Remember 30 years ago when BBQ was regular food…no hype…no celebrity pit masters…no ridiculously high prices. Remember getting brisket with a nice bark and smoke ring…remember pork ribs were bite perfect…remember sausage that had fat and texture. Came through the drive thru this morning, usually have no complaints, and I’ll probably end up changing my review anyways, just wanted y’all to sit with the 1 star for a bit. Got me some tacos for the wife and a biscuit for me. Everything was good except for the strawberry jelly, I think it might have turned. As soon as I put it on my biscuit, and tried it I realized it wasn’t good. At least half of it was still edible. Check y’all’s jelly!

I gave two stars; one for the brisket and one for the location. I grew up going to Bill Miller in Austin after UT games, it was family tradition, so when a franchise opened in Cedar Park, I was so excited. I stop there every once in a while for breakfast and the portion sizes have gotten smaller and smaller. Either inflation is really affecting this place or they need to revamp the menu and change “breakfast tacos” to “egg bites” so people get an accurate description of what they’re purchasing. Posted a picture with a scoop chip for size reference- it’s comical. Last time this happened and I complained, the girls stared at me like lost deer so I didn’t bother complaining this time. I hate writing negative reviews but I feel like this location needs to describe their food accurately, charge less or give reasonable food portions.

I discovered Bill Miller’s in San Antonio. I believe that the BBQ is made off premises and shipped to each restaurant daily. I am primarily fond of the jumbo chopped beef sandwich and the pinto beans. Their onions are slightly marinated and go very well with the other ingredients in the sandwich. There are many other selections on the menu, including other side dishes and desert. This particular location is new, replacing one that has been closed. Fortunately, this one is on my way home and handy to pickup some thing on the way. Something changed by the management is the drink cups. Previously, the cups were more insulated but are now thin plastic, allowing the ice to melt more quickly in warm weather. This location is taking orders at the was once for to go order’s only, which I don’t are for. I’m a fan overall of this restaurant. Prices arereasonable, ,

Had the worst customer service from this franchise ever. I go to bill miller almost everyday. The lady the line the call her ms Monica I believe was so rude. I explained my food was not portioned as I order 3 tacos because I’m hungry. She give me tacos full of potatoes so I asked for more eggs and she said no it comes with one scoop. I explained the portion size was small and she just kept refusing to accommodate my order so I asked for someone else to help me. Jennifer came to the register to help and gave a portion of eggs inside of the hot sauce cup. This was really rude and I feel like Jennifer carried the same energy as Monica. The manger did come over and asked to remake my tacos. I refused as at this point I don’t even want to eat the tacos and allow the energy that was made with these tacos to enter my body. Poor customer serve for a nice franchise. I hope someone talks to these two employees about the importance of customer service. I will never eat at this location again.

Had not been to a Bill Miller since bad experience years ago at Seguin location. Tried the Cedar Park location and the #1 combo was as good as I remember it. Got some pie for dessert and they were large slices. Will need to try different meats to see if they can knock it out of the park.

Excellent value for some good BBQ. We ordered the large family pack for $43.45 for 1.5 lbs of lean brisket and quart-size containers of potato salad, coleslaw, and pinto beans plus ample sauce, pickles and onions, and French bread. Everything was nicely packaged, well-prepared, and definitely hit the spot. Staff was friendly at the pickup. I’ve been to Bill Miller BBQ locations around central Texas many a time over the years and this location is as good as any I’ve ever been to. We’ll be coming back.

Stopped by for lunch today. I got the #8 combo (Rancher Plate) with sweet tea. The sausage was really tasty! The chicken could’ve been seasoned a little better but it was still really good. My wife got the brisket and she liked it very much. My wife also liked the bread at the condiment bar. The restaurant was very clean and tidy.
