Excellent, friendly service. Food was great, seasoned well and flavorful. Rice was fluffy and tasted great! Taco salad presentation was so cute! Good beer selection, beautiful little restaurant with a small patio. So excited to have this place around! I can FINALLY enjoy the authentic Mexican food I love! I’ll definitely be back!

We stopped at Pancho’s on our drive home to Denver from AZ… and we were SO happy we did! This is a cute, family-owned Mexican restaurant. Great service, delicious food, and cozy local atmosphere. If you need a bite and a beer, DEFINITELY stop in! It’s well worth it.

Tonight was our first night to enjoy Pancho’s and it will NOT be the last!! It was fabulous!! We come through Springer several times every ski season and we are so grateful to have found this gem. The service was fast and friendly. The dining area had an authentic, cozy atmosphere. We loved the chips and salsa! And the fajitas were great too! We had sopapillas for dessert and they might have been the best I have ever had. If you are travelling through Springer, you need to stop at Pancho’s.

I love this place. Beautifully decorated with amazing tables and chairs, incredible artistic pieces and hanging decor. The bar is perfect and serves delicious beer-brewed in town. Their patio is a great place to have a drink and enjoy the night. The food is….mind blowing. Seriously. The chicken tacos are addictive and the crispy relleno is delicious. Can’t go wrong with anything on the menu, but all of the tacos are the bomb. The staff is so kind and sweet and they really make you feel welcome. Its a great place to stop and rest on a long road trip or to enjoy if you are in the neighborhood. Small town vibes with big town flavor!

Great burritos! Stopped on our way from Taos to Tulsa and they were one of the few restaurants still open. Servers were so nice and accommodating. Will definitely be stopping here again if I’m in the area.

Panchos has been a huge thing in our little town. I love their steak burritos. They also have amazing staff. If your driving through springer this is a place to stop.

The food was delicious. I fell in love with the salsa (Chile de arbol) and our waitress Judy was a sweetheart. Decided last minute to turn back around and have a bite and it was well worth it!
