I’ll just tell you! We, hubby and I are food snobs. So, What a pleasant surprise to fine a country cafe that it neat and clean. Almost every table was filled with local folks chatting up local business, news and the latest gossip.

Just passing through town and got lucky fantastic authentic New Mexico style Mexican food and very reasonably priced and great service. I got a smothered chicken burrito with red and green sauce. It was huge and fantastic. Definitely worth the stop!

There isn’t much else around, so we were very excited to find a good place to eat! This is a small town restaurant, nothing fancy. It was very busy with take out and a few dine in tables for a late lunch on a weekday. You could tell they were trying hard to give us good service even with a small staff. The food is good and decently priced large portions. We left happy.

We were hungry on our way home to Denver and happened upon Elidas by sheer luck. We were very pleased with our meals and the service provided was exceptional. The whole beans are a must try. If you find yourself near Springer, eat at Elidas! You won’t be disappointed.

I was craving New Mexico style cuisine and this place really delivers. You can get your enchiladas or burritos smothered in either green sauce, red sauce or both mixed (aka X-mas style). I am really glad I stopped in today.
