We are a classic pizzeria offering naturally-leavened Pizza Napoletana, as well as Italian pastries and provisions on the side. Sourcing from Maine farms is of the utmost importance to us, and we let the seasons dictate our menu. Elizabeth English’s experience cooking and living in Rome and the Campania region of Italy have influenced the bold flavors of Quanto Basta.
Quanto Basta is often seen abbreviated in Italian recipes as q.b. and often next to ingredients like salt and pepper. The phrase comes into English as to taste or however much is enough. It perfectly encapsulates the intuitive, unmeasured charm of authentic Italian cooking.

What an absolutely gem of a place with simple and flavorful food that’s made with love. What we appreciated most was that this isn’t the same old Italian fare – the menu reflects the authentic cuisine of southern Italy. Pizza was crispy yet light; owner was right in the front making pizza; staff were extremely happy and helpful. Can’t recommend this place enough!

The long-awaited QB is open and delivering some of the best pizza on the PLANET! Fans & followers of chef Betsy’s food truck can now feast in this naturally-levened sanctuary of dough. The spritzes are delicious, ambiance friendly, and don’t sleep on the bagna cauda (save some for the crust). We can’t wait to stuff our faces here every week!

A true gem! You won’t find anyone else in town making authentic Neopolitan sourdough pies like owner Betsy and her team do. We have been back four times already (and they’ve only been open a few weeks); each time we have been wowed by the unique flavors in menu regulars like the ‘Nduja and the Margherita, and the daily special La Stagione–highlighting in season delicacies. Each item on the carefully curated selection of cocktails and wines delightfully compliments the excellent food. The friendly atmosphere–Adam makes you feel at home the moment you walk in the door–round out the experience. During a visit on a busy night Betsy took the time to chat with us about all things pizza while she was cooking. We will be back! Again and again.

This is a special place. The space is absolutely stunning and unique to anything else in Portland. The pizzas are insanely delicious; the sourdough crust is thin, crispy and everything you could possibly want. The cocktails are simple and compliment the food so well. Come here. Again and again and again.
