I gave them a 5 star, but I would prefer if they slowed down the heat on cracklins and sold softer ones for us older peeps. Unfortunately they lost my business on the cracklins- hard as a rock, but all the other stuff is top notch.

We tend to give such establishments a lot of credence which may be undeserved. That and my experience of places in Louisiana, where much more pride is taken in the selection of ingredients and their preparation. Also, there is evidence of at least one “local guide”, shilling for this place. How does a local guide get away with using the term “crayfish”?
