It’s exceptional to be able to enjoy great Mexican food while dining in the fresh open air and still being indoors. I think it’s fantastic how the glass front of Pajarito that opens up. There are two rows of tables that can directly enjoy the experience.

It started well enough. The drinks are excellent, and then chips and guac were amazing. That’s where the good experience ends. My server dropped my chips and guacamole off at my table and that was the last I saw her for 42 minutes. When she FINALLY came over, I pointed this out to her and she responded with other a dismissive tone that basically said “So? What’s your problem?

I took myself out to lunch at Pajarito and enjoyed every bite. The shrimp tacos were light, refreshing and still plenty filling. The shrimp were crispy fried, and the cabbage provided even more crunch. The mango pico de gallo / corn relish made the dish, in my opinion, and the chipotle aioli gave the perfect kick of heat. I wasn’t a huge fan of the tortillas…they got soggy rather quickly, despite the fact that there wasn’t much liquid on the tacos themselves. I couldn’t resist chips + a salsa flight. The arbol cashew was my favorite, with the ideal amount of heat for my tastebuds. I tried the habanero and, no surprise, it was scorching hot. I dipped a few chips until my eyes watered, then stuck with the arbol cashew and ancho guajillo. I’m looking forward to trying more of their menu soon, but my lunch was a great first impression.

Shrimp tacos were some of the best. Would improve the wine list. I know Mexico is not Napa, yet there would be good choices. The cocktails are great according to my dinner guest. It was packed so my opinions maybe shared that it is a fantastic choice.

FAVORITE HAPPY HOUR in the twin cities!!!! I’m always surprised when this place isn’t busier during happy hour. The menu is small but perfect, and HH is the only time that you’re able to order their nachos! Which are honestly the best nachos in town. I only wish they served them during non-HH times! My wife and I wash them down with a Pacifico and a shot of silver tequila. The regular menu is pretty darn good as well. Their carnita tacos are flavorful and some of the best I have ever had.
